The Barcelona Patatas Bravas List We Send to Friends

This is the Barcelona bravas list we send to friends. Bravas are the one tapa everyone orders and almost nobody agrees on, so we went looking for the places whose bravas specifically get singled out, not just the bars that happen to do decent tapas. What you'll notice fast is that Barcelona doesn't have one bravas, it has two. There's the Sarrià version, allioli plus a spicy oil poured over hand-cut potatoes, and there's the Madrid version, salsa brava and no mayo. Half the city swears by one, half by the other, and a couple of places on this list cheerfully serve both so you can settle it yourself. We've kept the historic institutions up top and let the creative versions (sobrasada oil, smoked aioli, even a Venezuelan crossover) fill out the back half. Expect to pay roughly €3 to €10 a plate depending on whether you're at a no-frills bar or a kitchen treating bravas as a signature.

A Guide to Patatas Bravas in Barcelona

What exactly are patatas bravas?

Patatas bravas are fried potato chunks served with a spicy sauce, and in Barcelona usually a garlicky allioli too. The 'brava' part refers to the heat: the original salsa brava is a punchy red sauce built on paprika and sometimes a little chilli. The potatoes should be crisp outside and soft inside, fried fresh rather than reheated. Beyond that, almost everything is up for debate, which is exactly why the dish is so personal to the people who eat it.

The two styles: Sarrià versus Madrid

Barcelona bravas fall into two broad camps. The Sarrià or Catalan style, the one most associated with Bar Tomás, tops the potatoes with allioli and a separate spicy oil, so you get creamy garlic plus heat in two layers. The Madrid style skips the mayo entirely and goes straight in with salsa brava, a thinner, tomato-and-paprika red sauce. Neither is more correct than the other, they're just different traditions, and tasting them side by side is half the fun. Fàbrica Moritz in Sant Antoni literally lists both on one menu, 'bravas from here' and 'bravas from there', so you can run the comparison in a single sitting.

How to spot bravas worth ordering

Good bravas come out hot and crisp, not soggy or lukewarm, which is the tell that the kitchen fried them to order rather than pulling them from a warmer. The sauce should taste of something: real garlic in the allioli, actual paprika heat in the brava. The best versions in Barcelona range from dead-simple classics, just potatoes and two sauces, to creative takes that add sobrasada oil, smoked aioli, shichimi-style spice or a meaty topping. Both can be excellent. What matters is that the potato itself is cooked properly and the sauce isn't an afterthought.

La Esquinica is the kind of place locals make a trip for. Tucked up in Nou Barris, it runs a menu of more than fifty tapas with a strong Aragonese accent, and the bravas (or 'pataticas bravicas', written in the Teruel diminutive the founders brought with them) are what the bar is best known for. The style here leans toward the punchier, Madrid-school end of the spectrum. It gets busy and loud, the way a good neighbourhood tapas bar should, and on a packed night you take a number and wait your turn. It holds a Repsol Solete. Come hungry and order wide: the fried squid, baby cuttlefish and chistorra are all part of the ritual once you're in.

Fàbrica Moritz is the best place in the city to settle the bravas debate, because it serves both sides at once. The menu lists 'bravas from here', with aioli and spicy oil in the Catalan style, and 'bravas from there', with mayonnaise and a spicy tomato sauce in the Madrid style, both at €5.95. Order the pair and you get a side-by-side tasting of the two camps Barcelona keeps arguing about. The kitchen at this big Sant Antoni brewery-brasserie is overseen by chef Jordi Vilà, and there's a stuffed potato bomba on the menu too if you want to keep going. It's a brewery first, so the bravas come with very good beer, which is no bad thing.

Informal is the polished end of the bravas spectrum. Set inside the Hotel Serras in the Gòtic with chef Marc Gascons running the kitchen, it treats the humble brava as something to engineer rather than just fry. The 'patatas bravas by Informal' (€8.50) is the gourmet expression of the dish, and it's worth ordering precisely because it's so different from the no-frills bar version up in Sarrià. The rest of the menu is seasonal Catalan and Mediterranean sharing food, Iberian ham, croquettes, grilled fish, so the bravas slot into a proper meal rather than a quick stop at the bar. Vivanda is the bravas outlier that's earned its place. Jordi Vilà's Sarrià restaurant tops its potatoes with aioli and spicy sobrasada oil (€7.90), which gives the dish a rounder, almost meaty heat you won't find at the classic bars a few streets away. It carries a Michelin listing and a Repsol Recomendado, and the menu is small-plate Catalan that rotates monthly with the market. The garden terrace is one of the nicer places in the neighbourhood to spend a long lunch. Purists will tell you it's not 'real' bravas because of the sobrasada twist, and that argument is exactly why it's worth ordering. Eat it, then go compare with Bar Tomás up the road and pick a side.
