Bar Canyí was born when chefs Francesc Beltri and Nico de la Vega, the duo behind nearby Michelin-starred Slow & Low, took over the space of O'Pazo, a Galician bar on Sepúlveda where they used to grab breakfast each morning before service. When the original owners retired, Beltri and de la Vega saw a chance to open the neighbourhood bar they had always wanted: one where haute cuisine technique serves traditional cooking rather than replacing it.
