The restaurant evolved from Santa Burg, the earlier burger concept, into a gastrobar / bistronomic format with Mediterranean, French, and Japanese culinary influences. Martín is responsible for front-of-house direction; Guiard leads the kitchen. La Mundana carries a Repsol Recomendado.
