Biography

Early years

Guiard's training runs through some of Europe's most demanding kitchens. In Catalonia he cooked at elBulli, Racó de Can Habas, and Sant Pau; in France, Sweden, and beyond he worked at Pyramide, La Coupole, Alain Ducasse, Le Méridien Ra, Ábaco, and Mandarin Oriental.

Career

Guiard now manages three restaurants in Barcelona — Contraban inside the boutique Hotel Wittmore in the Gothic Quarter, and La Mundana, the gastrobar / bistronomic restaurant he opened in 2015 with chef Marc Martín in the Sants neighbourhood — alongside a 50-employee sauce and gastronomic-solutions company called Gourmand and Guiard SL, founded after Guiard won the world catering championship. Contraban is in the Michelin Guide selection; La Mundana carries a Repsol Recomendado.
