La Mundana was born in 2015 as a natural evolution of Alain Guiard's gourmet hamburger project Santa Burg, right next door on Carrer del Vallespir in the Sants neighbourhood. Huevo sorpresa. Un clásico de la casa desde el principio. De los que no se tocan. Puré de patata en la base, yema trufada en el centro, y una espuma carbonara que lo envuelve todo. Se rompe, se mezcla... y pasa lo que tiene que pasar. Cremoso, profundo, sin estridencias. Hay platos que evolucionan

Ostra con ramen de jamón y velo de panceta. La ostra se templa con un caldo intenso de jamón que vertemos al momento. Encima, un velo fino de panceta que se funde con el calor. Mar, umami y grasa en equilibrio.

Steak tartar. Corte a cuchillo. Aliño medido y muy mundano. Temperatura exacta. Se come despacio. Se acaba rápido. Y siempre deja ganas de repetir.

Jordi hace poco que forma parte del equipo, pero ya es casa. Buen compañero, siempre dispuesto, siempre con una sonrisa que no es pose: es actitud.
