The Story

La Mundana was born in 2015 as a natural evolution of Alain Guiard's gourmet hamburger project Santa Burg, right next door on Carrer del Vallespir in the Sants neighbourhood. What started as an outlet for the increasingly elaborate cooking that had outgrown the burger format has become one of Barcelona's most popular gastrobars. Celebrating its 10th anniversary in 2025, the restaurant has earned a loyal following thanks to its formula of creative tapas, quality vermouth, and an unpretentious atmosphere that feels distinctly local.

The Cuisine

The kitchen fuses Mediterranean foundations with Japanese and French influences, producing inventive sharing plates designed for exploration. Signature dishes include 'la brava de la mundana,' gambas carpaccio, the surprise egg (huevo sorpresa), and 'arroz de cap i pota.' The cooking uses diverse techniques, charcoal grill, robata, smoking, escabeche, and the menu changes with the seasons. Repsol describes it as 'simple cooking executed with good taste, designed for sharing.' The vermouth programme is a defining feature.

The Team

La Mundana is co-led by chef Alain Guiard, whose background spans kitchens including Can Faves, Sant Pau (Carme Ruscalleda), Abac, Mandarin Oriental Barcelona, and Alain Ducasse in Paris, and Marc Martin, who manages both kitchen and dining room. Marc trained at Escola Joviat and honed his skills in starred UK kitchens including ROKKA and El Viajante. Gerard Marti directs the front-of-house team.
