Background
About Pimentel
The Story
Bar Pimentel is a tribute to Don José Eugenio Pimentel Lister, nicknamed Chujo, a Dominican merchant whose home in Puerto Plata became the neighborhood's unofficial gathering place: a house where people ate, drank and laughed until the last guest left. The Carders 11 bar carries that same spirit into El Born, positioning itself as the welcoming corner bar 'Chujo would have opened' if he ever had one.
The Cuisine
The kitchen pays homage to traditional Spanish cooking with a contemporary touch. The team shops the local market and fish lonja daily and cooks on site, building a menu of tapas, seafood, egg dishes and slow-cooked meats, Iberian ham, croquettes, cannelloni, braised beef cheek, Santa Maria beans, alongside a wine list matched to the tapeo.
The Team
Bar Pimentel is run by the hospitality team behind sister venue Nardi in Barcelona, with a collaborative kitchen rather than a named celebrity chef. The focus is on daily market shopping, in-house cooking and the warm, regulars-first service of a classic neighborhood bar.

Pimentel Dining Experience
Bar Pimentel leans into the warm, slightly noisy energy of a classic El Born tapas bar, red-and-white checkered graphics, red tiled tabletops, casual service and regulars leaning on the bar alongside visitors. It is designed as a neighborhood spot where groups share plates, order another round of croquetas and stay longer than they planned.
