Background
About Delta Arrocería Informal
The Story
Delta Arrocería Informal was opened in the Born by chef Daniel Rueda, previously of Tapeo Born and Tapeo Gràcia, together with his wife Natalia. The project is a family affair: the name DELTA is drawn from the initials of the five family members, Deniel, Emma, Leo, Tati and Arlet. Rice is cooked to order and served in individual cazuelas rather than family-size pans.
The Cuisine
The menu centres on individual cazuelas of rice, including mar y muntanya, arròs negre with baby cuttlefish, prawn, octopus, lamb, butifarra with mushrooms, trotter, spider crab and a vegan vegetable version, alongside fideuàs and Mediterranean small plates spanning crudos, cured fish, shellfish and grilled cuts.
The Team
Daniel Rueda leads the kitchen, building on experience developed at Tapeo Born and Tapeo Gràcia. The dining room interiors, in mortar, lime paint, oak and bush-hammered stone, were realised with artist Carme Balada.
