The Story

Bar Omar opened in 2016 on Carrer d'Amigó in Sant Gervasi-Santaló as chef Omar Díaz's first solo project. The concept is what the restaurant itself calls 'la cocina más canalla' - rowdy, streetwise neighbourhood cooking served in a casual, unpretentious dining room. Omar Díaz trained in some of Spain's most demanding kitchens (Arzak and Joan Roca among them) before returning to a neighbourhood-scale format built around the produce he knew best. In 2023 Díaz co-created Hijos de Javier two doors down at Amigó 32, and the two restaurants now operate as a chef-network pair on the same street.

The Cuisine

The kitchen runs a short, rotating menu of Mediterranean and Spanish small plates with a strong focus on the charcoal grill (brasa). Signature dishes verified from the restaurant's own English menu include: oreja a la brasa con salsa brava (grilled pig's ear with spicy sauce), mollete de carrillera (slow-braised beef cheek mollete), vieira a la brasa with sisho leaf and black sesame, calamar a la brasa 'a la carbonara', briox de papada melosa (braised jowl brioche) with house hoisin, onglet de ternera a la brasa (grilled hanger steak), magret de pato salvaje (wild duck breast with pears and pumpkin-seed praline), torrezno with siracha and lemon, and the signature torrija con caramelo salado y helado de turrón for dessert. The format is bar-and-small-table, built for sharing.

The Team

Chef-owner Omar Díaz runs the kitchen at Bar Omar. His training includes periods at Arzak (3 Michelin stars), Joan Roca (El Celler de Can Roca, 3 stars), and several other decorated Spanish kitchens. He also co-runs Hijos de Javier at Amigó 32 alongside chef Víctor García. The front of house at Bar Omar is small and attentive, and the restaurant has built a loyal neighbourhood following over its first decade.
