Hijos de Javier is a 2023 Sant Gervasi opening that doubles as a tongue-in-cheek 'museum dedicated to Javier', the archetypal Spanish male character (brown loafers, right-wing politics, family gathering discomfort), and a serious small-plates kitchen.

Background

About Hijos de Javier

The Story

Hijos de Javier opened in 2023 on Carrer d'Amigó as a collaboration between chefs Víctor García and Omar Díaz (of the neighbouring Bar Omar) and creative director Enric Rebordosa. The concept is deliberately playful: the venue is set up as a museum-like tribute to 'the Javier', an archetypal Spanish male character (brown loafers, right-wing politics, the family-gathering discomfort). The food mirrors the frame, sandwiches, pickled vegetables, banderillas, flan and torrijas, all served with the kind of polish Omar Díaz brings from his fine-dining pedigree (trained under Arzak and Joan Roca, among others) filtered through a castizo-taberna and Andalusian-bodega lens.

The Cuisine

The menu is built around the classic castizo-taberna vocabulary refined with contemporary technique: sandwiches on quality bread, pickled dishes ('banderillas' of olives, anchovies and piparras), tinned conservas, small warm plates, and classic desserts like homemade flan and torrijas. Drinks lean heavily on vermouth and Andalusian sherry. The format is deliberately informal, stand at the bar or take a high table and order a few plates at a time.

The Team

Chefs Víctor García and Omar Díaz run the kitchen. Omar Díaz also operates Bar Omar two doors down at Amigó 34, his first solo project, and trained under Juan Mari Arzak, Joan Roca and several other decorated Spanish kitchens earlier in his career. Creative director Enric Rebordosa is responsible for the restaurant's visual identity and the tongue-in-cheek 'museum of Javier' branding. Service leans bar-first rather than sit-down restaurant.

Experience

Hijos de Javier Dining Experience

The space is small and sharply art-directed: vintage Madrid bullfight posters, old photographs, carefully chosen typography, the visual vocabulary of a castizo taberna updated for 2023 as a museum-like tribute to 'the Javier' archetype. The tone of the room matches, unhurried, bar-first, with most customers eating standing or at a high table with a glass of vermouth.
