The Story

Francesca and Valentina opened Aguaribay in 2010 as a vegetarian and vegan restaurant in the then-industrial Poblenou neighbourhood, and later welcomed Augusto to the team as head chef. Over fifteen years, the restaurant has built a loyal local following around a simple premise: respect for people, animals and the environment, translated into honest, flavourful cooking. The guide Slow Food Barcelona highlighted Aguaribay in its 2024 edition for its commitment to small-scale producers and artisanal preparation.

The Cuisine

The kitchen fuses vegetarian and vegan traditions into a menu of creative, ingredient-driven plates: millet koftas with pickled vegetables, buckwheat blinis with seed cheese, veggie balls in Catalan picada sauce, Indian or Thai curry, homemade ricotta-spinach ravioli, and a seasonal vegetable lasagna. A daily menu inspired by macrobiotic principles runs alongside the à la carte, built around whole grains, organic legumes, seaweed, homemade tempeh and seitan, and house-made ferments and sprouts. Homemade desserts, organic and natural wines, artisan beers, house vermouth, kombucha and Italian coffee round out the offering.

The Team

Co-founders Francesca and Valentina lead the front of house and kitchen alongside head chef Augusto, who joined shortly after opening. The small team shares a background in gastronomy and a commitment to cooking everything, pickles, ferments, tempeh, seitan, desserts, from scratch on site.
