A Michelin star is the guide's top distinction, awarded to a small number of restaurants each year. A Michelin Guide listing, sometimes called 'Selected,' means the restaurant is included in the guide's recommendations without holding a star. RavioXO is the only Italian restaurant on this list with a star; Gioia, Ozio Gastronómico, Dantte and Gianna Ristorante are Michelin-listed rather than starred.
What do Repsol Sol, Recomendado and Solete mean?

Years of Eating, Asking, and Going Back
We built this list by reading the Michelin Guide's own best-of feature on Italian restaurants in Madrid, alongside pieces from La Gastronoma, Madrid Secreto, Vive la Vida Roca, Un Buen Dia en Madrid and Memories of the Pacific, and cross-checking every restaurant those sources named against the Madrid restaurants we've profiled, keeping only those currently open, matching each one on its street address rather than name alone. RavioXO isn't named in any of those six articles despite holding a Michelin star; we added it anyway because a star is the clearest possible signal of authority for this topic. We left out kitchens whose own cuisine listing is pizza rather than Italian, since those belong on a separate pizza guide, and we left out restaurants named repeatedly in the source articles, including Baldoria, Beata Pasta and Settebello, because they aren't yet ranked in our own system; we've noted that gap rather than guessing at their current details.

RavioXO1. RavioXO — Dabiz Muñoz's Michelin-starred pasta and dumpling laboratory
RavioXO is chef Dabiz Muñoz's pasta and dough-led restaurant inside the Gourmet Experience at El Corte Inglés Castellana in Cuatro Caminos, part of his univerXO group alongside three-Michelin-star DiverXO. It opened in May 2022 and won a Michelin star that November, which El Corte Inglés billed as the first for a department store anywhere in the world; it also holds a Repsol Sol. The kitchen treats the dumpling wrapper itself as the thing worth perfecting, and was planned around rolling some 4,500 a day at full capacity. The menu runs from the wontollini soup to a cold-carbonara 'hangover pasta' with Korean fried chicken and a three-way-cooked Peking Margherita pizza. There's a single tasting menu, 360 Festival, at 165 euros, and no coeliac menu.

2. Don Giovanni — Truffle-and-pasta Sicilian-Italian table by the Prado, one Sol
Don Giovanni cooks Sicilian and Italian food on Paseo de la Reina Cristina in Jerónimos, a few streets from the Museo del Prado, and holds a Repsol Sol. Tumbarello took it over in 2005. Truffle dishes anchor the carta, from a fonduta with truffle caviar and fontina to a fried egg with truffle shavings and truffle pearls, alongside classics like spaghetti carbonara and aubergine parmigiana. Chef Andrea Tumbarello leads the kitchen. It's a family-friendly room with a terrace and a wheelchair-accessible entrance, but tables aren't easy to come by, and only Tuesday's hours are confirmed on the restaurant's own listing, so it's worth checking the rest of the week before you plan a visit.

3. Gioia — Davide Bonato's Michelin-listed Italian, pasta and bread made in-house
Gioia is chef Davide Bonato's restaurant on Calle San Bartolomé in Justicia, listed in the Michelin Guide and Repsol's Recomendado. Chef Davide Bonato opened it in 2015. Bonato, from Piedmont, reinterprets Italian cooking with everything made in-house by hand, from the pasta to the bread and desserts. The carta runs to tagliolini with 40 egg yolks, seasonal truffle and Cacio Nerone; mezzemaniche carbonara with pecorino foam and a charcoal crumble; and a Milanese-style risotto finished with 24-karat gold leaf. There are two tasting menus, Essentia and NESSO. The room reads romantic and elegant with a trendy edge, service is polished, and it's closed Mondays and Tuesdays, running to 00:30 the rest of the week.

4. Ozio Gastronómico — Sicilian tradition in Cuatro Caminos, Michelin-listed since 2022
Ozio Gastronómico has cooked Sicilian-accented Italian food on Calle del Aviador Zorita in Cuatro Caminos since January 2022, listed in the Michelin Guide. Chef Vincenzo Turrisi runs the kitchen, Francesco Moressa directs the dining room and wine, and owner Alberto Andolina carries the Sicilian character through the room. Two tasting menus anchor the carta: Ozio Supremo at 62 euros, running from a Sicilian-wine pairing to pizza Regina Margherita and tiramisu, and the 49-euro Pasta Lovers menu, with pesto trapanese con tonno and a tagliolino al tartufo. The room is quiet, intimate and classic rather than trend-chasing, there's a terrace, dogs are welcome, and it opens Wednesday to Sunday.

Dantte5. Dantte — 'Bastard Italian Cuisine' with Argentine detours, open past midnight
Dantte sits on Santa Engracia in Almagro and calls its own cooking 'Bastard Italian Cuisine,' Italian roots run through cosmopolitan influences from New York and Buenos Aires. It opened in autumn 2024. It's listed in the Michelin Guide. Chef Dante Liporace, whose track record runs from El Bulli to Argentina's Casa Rosada, leads a kitchen where pasta and risotto do the heavy lifting: rigatoni all'amatriciana, spaghetti aglio e olio al limone and boletus-and-black-truffle ravioli in alfredo, alongside Argentine secondi like milanesa de solomillo and ojo de bife. Down on the lower floor, La Cueva runs as the venue's own speakeasy, with vintage cocktails and a DJ. The room is part industrial, part cosy, dog-friendly, and stays open to 02:00 most nights.
Gianna Ristorante6. Gianna Ristorante — Ignazio Esposito's grandmother-named Italian-fusion room in Trafalgar
Gianna Ristorante is on Calle de Eguilaz in Trafalgar, listed in the Michelin Guide. According to Madrid Secreto, its chef, Ignazio Esposito, previously cooked at DiverXO and RavioXO, and the restaurant is named after his grandmother, whose portrait hangs at the entrance. The carta mixes Italian technique with outside influences without much fuss: a carbonara croquette, cod ravioli with pilpil sauce, and a burrata served Italo-Thai alongside tagliolino with seasonal truffles. The room is intimate, cosy and modern, service is polished and attentive with chef interaction built into how it's served, and it's closed Mondays and Tuesdays, with dinner Wednesday to Saturday and lunch Thursday to Sunday.

7. Bosco de Lobos — Grupo Tragaluz Italian tucked into an architects' garden
Bosco de Lobos sits in the garden of the Colegio Oficial de Arquitectos de Madrid on Calle de Hortaleza in Chueca, part of Grupo Tragaluz, and holds a Repsol Solete. The house sums up its own kitchen in three words: antipasti, pasta and pizza. The carta runs to a fried pizza with mortadella, pickle, squacquerone and pistachio pesto; parmigiana di melanzane; and a burrata with sauteed asparagus, basil, lemon and hazelnuts, alongside beef and octopus carpaccio. Being tucked inside an institutional building's garden sets the tone, off the street without being far from it. It's open daily from 13:00, to 01:00 Sunday to Thursday and 02:00 on Friday and Saturday, and runs 20 to 30 euros a person.

8. Bel Mondo — Big Mamma's 900 m² trattoria, with a leafy Velázquez terrace
Bel Mondo is the Big Mamma group's trattoria and Neapolitan pizzeria at Calle de Velázquez 39, a 900 m² space for more than 300, with an open kitchen led by chef Daniele Tasso. The room is lively and loud, styled like an Italian summer palace with an eighties streak, and its terrace sits surrounded by dense greenery. Some tables are bookable and the rest are kept for walk-ins. The menu runs the group's house style of Italian cooking: burratina from Caseificio Montrone in Puglia with basil pesto, truffle mortadella, and a weekday lunch menu from €15. 9. Circolo Popolare — Big Mamma's room under Torre Picasso, 2,000 bottles on the wall
Circolo Popolare is the Big Mamma group's Italian restaurant at the foot of Torre Picasso on Plaza Pablo Ruiz Picasso, in Tetuán. The menu, published on the Big Mamma group's own site, runs to stracciatella, mortadella al tartufo, coppa nostrana and a burrata al pistacchio with Sardinian pane carasau, alongside a weekday menu of the day from 15 euros. It's open every day for lunch and dinner, bookings run online only through SevenRooms, and it's flagged good for groups, good for families and dog-friendly, at 26 to 50 euros a person.

10. Pagus — Quiet Lista Italian built on an open kitchen and wine list
Pagus cooks Italian food on Calle de Padilla in Lista, in a room that's quiet, casual and a bit rustic, with an open kitchen in view and a wine list flagged as one of the reasons to be there. It runs two services Tuesday to Sunday and closes Mondays. The carta covers both handmade pasta, like caramelle with pesto and boletus, tortellacci with asparagus and guanciale, and cavatelli alla frissurata, and classic starters such as parmigiana di melanzane and carne salada Trentina. Mercato Ballaró is Sicilian chef-owner Angelo Marino's restaurant on Calle Santa Engracia in Almagro, named after the oldest market in Palermo as a nod to his home city. The ground floor works as an informal bar for tapas and raciones from the Palermo repertoire, while a calmer upstairs dining room leans on seafood and pasta in a menu that shifts with the season. Florentine sits on Calle Serrano in Recoletos, open every day from 13:00 to 01:00, with a rooftop and a terrace that are as much the draw as the food. The cooking is traditional Italian, built for sharing: an Antipasto Grande platter of cured meats, cheeses and stracciatella; burrata pugliese with Sicilian caponata and crispy carasau bread; and the Holy Carbonara, spaghetti served for two in a wheel of pecorino with crispy guanciale and egg yolk. There's also a caviar and oyster list for those who want to go further.
