The Story

Gioia is on Calle San Bartolomé in Justicia, the narrow-streeted, better-dressed side of Chueca. Chef Davide Bonato calls it the dream of his life, a place to reinterpret Italian cooking, authentic and essential but always with an avant-garde eye. Everything that leaves the kitchen, from the pastas to the breads and desserts, is made in-house by hand. It's listed in the Michelin Guide.

The Cuisine

Italian, traditional and seasonal, reinterpreted with an eye for form, colour and texture, everything from the pasta to the bread and desserts made in the kitchen's own atelier. The truffle has been the house icon for a decade. There's a tasting menu, NESSO, a weekday lunch menu and a full carta.

Joy and Jewel

Gioia has two meanings in Italian, joy and jewel, and the house plays on both: refined good humour, and dishes it calls small jewels made with the best produce and serious technique. Bonato calls it the dream of his life. Everything that leaves the atelier is handmade, the pastas made in the Italian tradition, the breads and the desserts, a deliberate stand against fast everything. The truffle, which grows wild in highly biodiverse ecosystems, has been the house emblem for ten years.

NESSO and the Carta

NESSO, Italian for bond or connection, is the tasting menu and the link between Italian technique and extraordinary products from both Italy and Spain. It runs from an Ibérico tonnato, seared presa with a light tonnato sauce, calamansi gel and caper powder, and a 'false burrata' of cuttlefish pasta with lobster salad, to borlotti beans with red prawn, 40-yolk tallarines with fresh seasonal truffle, egg and Cacio Nerone, Barquero cod with corn cream and wild mushrooms, and sirloin in Périgord sauce, finishing with a meringue margarita with lemon curd and a Piedmontese bunet. It's €79, or €89 at the Mesa Visual, with wine pairing at €45 or a €39 'liquid menu' of drinks such as a liquid Caprese and a mushroom consommé.

On the carta, pastas run from agnolotti del plin with Ibérico ham (€28) and mezzemaniche carbonara with Pecorino foam and charcoal crumble (€27) to the truffle tallarines (€33) and a risotto alla milanese with 24-carat gold leaf (€30, minimum two). There's also a steak tartare with gnocco fritto, a 500-gram veal Milanese, a cheese selection of Morbier, Blu 61 and Époisses, and desserts from the house tiramisu to a tropical pannacotta. On Wednesday to Friday lunchtimes the 'Tre Volte Gioia' menu brings vitello tonnato, Bonato's carbonara and tiramisu for €45, bread included.

The Team

Davide Bonato, nicknamed 'Davidino' by early colleagues, took his first steps in kitchens in London at 16 and travelled from the rice fields of Piedmont through several countries to open Gioia in 2015. He brings more than 25 years in high-end restaurants across Italy, the UK and Japan, and builds his cooking on tradition and innovation: essential old flavours reborn in new forms, colours and textures.
