Early years

Bonato is from Trino Vercellese, a small town near Turin in Piedmont, and grew up around food: his grandmothers cooked professionally, and his father was a chef and restaurant owner running Il Convento, set inside a 15th-century convent in their hometown, built around Piedmont staples like Carnaroli rice and truffles.

Career

At 16, Bonato travelled to London to train in the kitchens of Stefano Cavallini, the first Italian chef to earn a Michelin star there. He went on to build more than 25 years of international experience in high-end restaurants across Italy, the United Kingdom and Japan. In 2015 he opened Gioia in Madrid together with Daniela Rosso, who also cooks and directs the restaurant, reinterpreting Piedmont recipes for the city. Gioia is listed in the Michelin Guide and carries a Repsol Recomendado distinction.

Philosophy

The restaurant's dishes are described as small 'jewels' prepared with high-level technique and top-quality product, aiming to be authentic, essential and avant-garde at once.
