Nonna's Recipes, Well Travelled

The name honours the chef's grandmother, and her recipes are the root of the cooking: the house meatballs, 'El legado', come straight from her, in arrabbiata with goat's-cheese cream. From there the dishes travel, picking up Asian and Latin touches and the precision of Madrid's high-end kitchens. Fresh pasta is made daily and is the heart of the carta.

The Carta

The carta is short and changes with the seasons. Starters include the Burrata Italo-Thai, with marinated grilled aubergine and a Thai-style green curry, a Mediterranean mix of heritage tomatoes with a tomato aguachile, and croquetas carbonara with guanciale and pecorino. The pastas carry the signature: cod ravioli with a Venetian filling, squid ink and pil-pil, the dish most associated with the restaurant, a Pasión Napoletana pacchero with several tomato preparations, gochujang and stracciatella, fettuccine with rabbit alla cacciatora and black garlic, a truffle tagliolino, and a fine tagliolino cooked in sea bass broth with nori sauce. Duck breast comes glazed in a Tuscan-wine teriyaki. For dessert: the grandmother's tiramisù, pineapple ravioli with curry chantilly and salted coconut caramel, and a panna cotta with truffle and apple. A group menu costs €43 per person.

Ignazio Esposito

The Team

Gianna is the personal project of Neapolitan chef Ignazio Esposito. He worked in Italy with Heinz Beck and Antonino Cannavacciuolo, arrived in Madrid in 2018 without speaking Spanish to join DiverXO, and was later recruited by Dabiz Muñoz for RavioXO, the pasta project that won a Michelin star within about six months. Gianna, named after his grandmother, is where he set out on his own.
