The Story
Don Giovanni is a Sicilian-Italian trattoria a few streets from the Museo del Prado, run since 2005 by Andrea Tumbarello, who went from customer to cook to owner in a matter of weeks. It describes itself as welcoming and popular, without pretensions, serving simple dishes made with care, and it has built its identity around the truffle.
The Cuisine
Sicilian and Italian, centred on truffles and pasta. Tumbarello has his own line of truffle products, from salt, honey and butter to truffle caviar and chocolates, and a whole section of the carta is devoted to eggs with truffle and caviar. Dried pasta comes from Benedetto Cavalieri, there are gluten-free products from Schär and lactose-free ones from Negrini, and some desserts come from pastry master Paco Torreblanca.
From Customer to Owner
Tumbarello first came to Spain in March 1989, for Holy Week in Málaga, where he met Carol, a pharmacist also on holiday. He moved to Madrid on 18 December 2004 to marry her, and for a while lived between Madrid and Milan, where he kept his office. One night in 2005 he went for dinner at Don Giovanni, 200 metres from his home, was surprised by how poor his pasta was and asked to speak to the owner, who simply offered him the business. A month later he was shut in the kitchen testing whether he could run a restaurant. He took on the challenge, gave up his Milan office and devoted himself to this humble trattoria in Retiro.
The Truffle King
Tumbarello is known as the 'rey de la trufa', and the carta shows it. 'Los huevos de Andrea' run from a fonduta with truffle caviar (€27.50) and an egg with black truffle (€31) to an egg with potato purée and caviar (€75), and the truffle turns up again in tagliolini with seasonal black truffle, linguine with boletus cream and truffle, lunette of cheese and truffle, a mushroom and black-truffle risotto and a truffle cheesecake.
The rest of the carta is a long Italian repertoire: fiori di zucca, provolone, melanzane alla parmigiana and burrata; spaghetti from an 'original' carbonara (€18.90) to cacio e pepe and a prawn 'gambonara'; gnocchi, pappardelle, busiate con le sarde, lasagna della mamma and filled pastas; risottos including alla milanese with bone marrow; more than twenty pizzas and Roman pinsa from a €15.30 Margherita; and meats such as a cotoletta alla milanese for two. Several dishes are named in homage to fellow chefs, among them a spaghetti for César Martín of Lakasa and a bottarga pizza for Ricardo Sanz. The cannolo siciliano and tiramisù close things out.
Carts, Salts and Gin
One of the house signatures is the olive-oil cart, with more than 40 Spanish and Italian oils, but the most popular cart is the gin-and-tonic one: Don Giovanni lists more than 160 gins, a big draw in summer when the terrace is the prize seat. The kitchen also keeps some 20 salts from around the world, good vinegars and a selection of Italian cured meats sliced on a vintage Berkel machine. The wine list is heavy on Italy, with a Sicilian section from Planeta and Tasca's Regaleali estate, and Tuscans up to Tignanello.
Recognition
Don Giovanni holds one Sol in the Guía Repsol. In November 2009 it won the public's vote for best popular-cuisine restaurant at the ABC Salsa de Chiles awards, and in May 2012 the Muestra Gastronómica de la Pasta y el Dulce in Daroca named it the best Italian restaurant in Madrid. Tumbarello received the Real Academia de Gastronomía's Marqués de Desio award for best Spanish restaurant entrepreneur in 2017, and he is vice-president of the Federazione Italiana Cuochi, teaches at the Basque Culinary Center and Le Cordon Bleu, and received MasterChef's golden spoon in 2023 to mark his tenth appearance on the show.

The Team
Andrea Tumbarello was born in Marsala, Sicily, in 1964 and trained as an economist, though food was always part of his life. In the kitchen he's backed by a team led by Phillip Eckert, and Óscar Reyes runs the dining room. In 2012 he hired Rodrigo Semczuk, who had worked for years alongside Abraham García of Viridiana, Tumbarello's own mentor, and brought artisan breads and Viridiana's historic curried lentils to the carta.
