Dabiz Muñoz (David Muñoz Rosillo, born in Madrid in 1980) is the chef and founder of DiverXO, StreetXO, RavioXO, and the delivery concept GoXO, together known as UniverXO. He trained in Madrid and London, including stints at Hakkasan and Nobu, before opening DiverXO in 2007; it earned three Michelin stars by 2013 and remains Madrid's only three-star restaurant. RavioXO, opened in 2022, won a Michelin star within six months. Muñoz was named Best Chef in the World by The Best Chef Awards three years running, 2021 through 2023.

Biography

Early years

David Muñoz Rosillo, known as Dabiz Muñoz, was born in Madrid in 1980, with no family background in the restaurant trade. He trained at the culinary school in Torrejón de Ardoz from age 17, then worked at the Madrid restaurants Balzac, Viridiana (under chef Abraham García), Catamarán, and Chantarella, before moving to London, where he worked in kitchens including Orrery, Hakkasan (starting as pastry chef before moving to the hot kitchen), Locanda Locatelli, Pearl, and Nobu.

Career

Muñoz returned to Madrid and opened DiverXO in 2007. The restaurant earned its first Michelin star in 2010, a second in 2012, and a third in 2013 at age 33, making it Madrid's only three-Michelin-star restaurant; it moved into its current site at the NH Eurobuilding hotel in 2014. He opened StreetXO in 2012, a street-food concept inside El Corte Inglés's Gourmet Experience on Calle Serrano, and expanded it to Mayfair, London, in 2016 before closing that location in 2020. RavioXO followed in 2022, a pasta-and-dumpling restaurant inside El Corte Inglés Castellana that earned a Michelin star within six months of opening. GoXO, a delivery concept, and these three restaurants together make up what Muñoz calls UniverXO. In 2026 he relaunched DiverXO's separate liquid tasting menu, Metamorfosis, priced the same as the solid menu after four years of development. He has also acquired land in Boadilla del Monte, outside Madrid, for a future project combining gastronomy, design, art, and entertainment, though no opening date has been announced.

Philosophy

Muñoz has summed up his approach as: "It takes a lot of courage to change things when people like them." His cooking applies complex technique and ingredients drawn from different culinary traditions, particularly the Asian kitchens where he trained in London, to fusion dishes built around bold, often theatrical presentation. DiverXO's winged pig symbol traces to his father's skepticism about his career choice, telling him he'd succeed "when pigs fly."
