DiverXO, chef Dabiz Muñoz's three-Michelin-star restaurant in Hispanoamérica, sits at the top of Madrid's fine-dining scene, but the full experience of eating well in this city runs well beyond tasting-menu counters. Zalacaín has run as one of Spain's great gastronomic institutions in El Viso since 1973, O'Pazo has served Galician seafood in Nuevos Ministerios since 1969, and Coque moves its two-Michelin-star Eat with Art menu through the different spaces of a converted Almagro building. Thirteen restaurants make this list, chosen for the whole evening: the room, the service, the wine programme and the cooking, not just a single fixed sequence of courses. Some, like DiverXO and DSTAgE, run tasting menus only. Others, including Zalacaín, O'Pazo, Saddle and El Paraguas, still serve a genuine à la carte.

A Guide to Fine Dining in Madrid

What counts as fine dining in Madrid?

Fine dining generally means a formal or semi-formal dining room built around trained service, a curated wine list and a kitchen working at a high technical level, whether that's expressed through a fixed tasting menu or a full à la carte. It isn't the same thing as holding a Michelin star: several of Madrid's grand old dining rooms built the format long before the current wave of star chefs.

Tasting menu or à la carte?

A tasting menu is a fixed sequence of courses set by the kitchen, the format most of Madrid's Michelin-starred rooms now use. À la carte means ordering dish by dish from a printed menu, the older format that a handful of Madrid's grand dining rooms, run as institutions rather than single seasonal concepts, still serve alongside or instead of a tasting option.

What's a Repsol Sol?

The Guía Repsol is Spain's own restaurant guide, awarding Soles, suns, from one to three, often alongside or instead of a Michelin star. A number of Madrid's most established fine-dining rooms carry Repsol Soles without currently holding a Michelin star.

Why do wine cellars matter at this level?

At the top end of fine dining, the wine list is treated as seriously as the kitchen, with dedicated sommeliers, deep cellars and formal pairing menus alongside the food. A restaurant's cellar size or sommelier credentials are often as much a part of its reputation as any individual dish.

How We Built This List

Years of Eating, Asking, and Going Back

We built this list by looking past star tiers to the full fine-dining experience: the room, the service, the wine programme and whether the kitchen runs a tasting menu, à la carte, or both. We checked Michelin's own guide and best-of pages, official Guía Repsol listings, and each restaurant's own site and menu documents, then read every selected venue's own page on Guidavera before writing its entry. Some restaurants here hold multiple Michelin stars; others hold none but carry a Repsol Sol and decades of history instead. Where a detail like a closure, a price or a wine-list size wasn't confirmed in our own research, we've said so rather than guessed.

1. DiverXO — Book months ahead for four-table seatings, tasting menu only

DiverXO holds Madrid's only three Michelin stars, a status chef Dabiz Muñoz earned in 2013, alongside three Repsol Soles. The restaurant sits inside the NH Eurobuilding hotel in Hispanoamérica, with tables that seat a maximum of four and no à la carte, only the tasting concept Muñoz calls La Cocina de los Cerdos Voladores, the cuisine of the flying pigs, rewritten from service to service rather than by season. Marta Campillo runs the dining room and won Spain's Premio Nacional de Gastronomía for best front-of-house in 2021. Past courses have run from xiao long bao in Tom Kha soup to duck-tongue wafers with caviar. Michelin's own guide calls it a gastronomic temple anyone able to should discover, and warns that tables need months of advance booking. It's open Tuesday to Friday for lunch and dinner, closed the rest of the week.

Coque holds two Michelin stars, a Michelin Green Star and three Repsol Soles in Almagro, run by the third generation of the Sandoval family: chef Mario, sommelier Rafael and dining-room director Diego. Their parents opened a rotisserie called Coque in Humanes de Madrid in 1976, and the family moved the restaurant into central Madrid in 2017. Its Eat with Art tasting menu pairs 16 dishes with 15 contemporary artworks, priced at 495 euros a head, with a 395-euro vegetarian version. Roasted suckling pig is the restaurant's enduring signature, alongside dishes like a fighting bull steak tartare. Michelin's own guide singles out the meal as a journey through the restaurant's different spaces rather than a single room, part of what it calls an experience that wakes the senses as much as the emotions.

Michelin SelectedRepsol

Zalacaín has been one of Spain's great gastronomic institutions since it opened in El Viso in 1973, listed in the Michelin Guide with one Repsol Sol. It's now in a new era under Grupo Urrechu, with chef Íñigo Urrechu on gastronomic direction and Jorge Losa in the kitchen, while the dining room has stayed with Roberto Jiménez for more than 35 years. The cellar is led by Raúl Revilla, named Spain's best sommelier at the 2023 Premios Nacionales de Gastronomía. The à la carte runs from Caviar Imperial Beluga and a goose liver terrine through Beef Wellington and a sirloin steak tartare, alongside the house classic Búcaro 'Don Pío,' a consommé gelée with smoked salmon, quail egg and caviar. It's closed for the whole of August.

DSTAgE holds two Michelin stars, a Michelin Green Star since 2025, and three Repsol Soles in Chueca. Chef Diego Guerrero, born in Vitoria in 1975, built El Club Allard to two stars before opening DSTAgE on Calle Regueros in July 2014, reaching two stars of its own since the 2017 guide. The room is a discreet industrial loft built around an open kitchen, with reservations opening up to 120 days ahead and meals running roughly two to two and a half hours. Three tasting menus, Dtaste, Dstage and Denjoy, are the only way to eat here, no à la carte. Michelin's own guide credits Guerrero with a free spirit that runs from convention, fusing products and influences from around the world into a menu that keeps evolving. It isn't recommended for children under 10, and there's no high-chair or stroller space.

Deessa is chef Quique Dacosta's first restaurant in Madrid, set inside the Mandarin Oriental Ritz's Alfonso XIII salon in Jerónimos, with a terrace onto the hotel garden. It won its first Michelin star eight months after opening and a second the year after, and now holds two Michelin stars and two Repsol Soles. The Contemporáneo QD Ritz tasting menu runs 195 euros per person, carrying over dishes from Dacosta's three-Michelin-star flagship in Denia, among them a cubalibre de foie-gras finished with lemon frost and wild arugula. The dining room sits under a gilded domed ceiling with crystal chandeliers and cream banquettes. It closes Mondays, Tuesdays, Sundays and the whole of August, with last dinner bookings taken at 21:00.

6. Paco Roncero — Three tasting menus atop the Real Casino de Madrid

Paco Roncero sits on the top floor of the Real Casino de Madrid in Sol, a room Michelin's own guide calls a marriage of elegance and vanguard, with a spectacular terrace. Chef Paco Roncero took over the kitchen, then La Terraza del Casino, in autumn 2000 with early guidance from Ferran Adrià, and it took his name in 2019. It holds two Michelin stars and three Repsol Soles. Three tasting menus run the room: Gran Madrid, 25 dishes for 310 euros; Madrid Madrid Madrid, 23 courses for 240 euros; and Esencia, 15 courses from 190 to 280 euros, available at weekday lunch or with a wine pairing on evenings and Saturdays. Sommelier wine pairings run 125 to 295 euros. The signature is a truffle pizza on a dry meringue base.

Saddle is a one-Michelin-star, two-Repsol-Sol restaurant in Almagro, built inside the former home of Jockey, one of the landmark Madrid restaurants of the 20th century. It was created to bring back the grand à la carte restaurant against the tasting-menu tide, serving classic recipes with nouvelle-cuisine references in full or half portions, alongside an eight-course Estaciones tasting menu for anyone who wants one. Israel Ramírez runs the dining room and a wine list of roughly 1,400 to 1,500 references, spread across two floors with five private dining rooms and a separate bar. Dishes include solomillo Rossini, Madrid-style callos and a tableside-carved roast beef of Rubia Gallega. Ramírez was a finalist for the 2025 Premios Metrópoli award for best front-of-house.

Corral de la Morería Gastronómico is the one-Michelin-star, three-Repsol-Sol dining room set inside the Corral de la Morería, the Madrid flamenco tablao that has run since 1956. Chef David García, from Bilbao, cooks Basque-rooted haute cuisine for just four tables a night, built around a tasting counter, with evening sittings at 20:00, 20:30, 21:00 and 21:30. The cellar holds more than 1,000 references of Jerez, sherry, wines, an unusual focus for a Madrid dining room. There's a single fixed Menú Compás, with an optional nine-wine pairing or a nine-wine Súper Premium pairing for guests who want to go deeper into that cellar. The entrance and seating are wheelchair accessible.

O'Pazo is a Galician seafood restaurant, a marisquería, in Nuevos Ministerios, holding two Repsol Soles. It opened in 1969 and won a star in Michelin's first-ever Red Guide for Spain, before Evaristo García took it over in 1981 and a 2008 renovation modernized the room. Seafood is sold by weight straight from the tank, Ría spider crab, Cantabrian lobster, Sanlúcar langoustine and natural Carril clams among them. The carta also runs to a two-course fish and seafood soup, an Evaristo sole for two, and rice dishes like a black rice with line-caught baby squid; the tenderloin with garlic is finished tableside.
