Sergio Manzano is the head chef of A'Barra, the Michelin-starred Spanish restaurant in Madrid's El Viso neighbourhood. He trained at the Escuela Superior de Hostelería y Turismo de Madrid and spent roughly 13-14 years at Zalacaín under Benjamín Urdiain before joining A'Barra as head chef and head of research and development. A'Barra has held its Michelin star every year since 2016, when the restaurant opened under founding chef Juan Antonio Medina.

Biography

Early years

Manzano was born in Madrid. He attended the Escuela Superior de Hostelería y Turismo de Madrid, starting later than typical because his parents initially wanted him to study engineering.

Career

He interned at Hotel Ritz Madrid and worked briefly at La Paloma, then spent about 13-14 years at Zalacaín, where he credits chef Benjamín Urdiain for teaching him to cook. He later joined A'Barra, the restaurant Juan Antonio Medina opened in 2016 and led to its Michelin star, and is now head chef and head of research and development.

Philosophy

Manzano has described A'Barra's cooking as classical technique understood through a contemporary lens, prioritising the primary ingredient and using technique to serve flavour rather than mask it.
