Biography
Early years
Paco Roncero (Francisco Javier Roncero Fernández) was born in Madrid in 1969. He trained at the School of Hospitality and Tourism of Madrid and did early kitchen work at Zalacaín, a three-Michelin-star restaurant, and at the Hotel Ritz Madrid, before joining the Casino de Madrid team in 1991.
Career
At the Casino de Madrid, Roncero worked alongside Ferran Adrià, became head of the banquets department in 1996, and was promoted to head of the kitchen (then called La Terraza del Casino) in 2000. The restaurant earned its first Michelin star in 2002 and a second in 2010; it was renamed Paco Roncero Restaurante in 2019 and now holds 2 Michelin stars and 3 Repsol Soles on the top floor of the Real Casino de Madrid. In 2014 he also opened Sublimotion, a 12-seat immersive tasting-menu concept at Ibiza's Hard Rock Hotel that combines video, sound, and technology with the food. Since 2015 he's also judged the Spanish edition of Top Chef on television, and has judged celebrity editions of Bake Off in Colombia (2022) and Spain (2023).
