Diego Murciego is the head chef of Desde 1911, the seafood restaurant of Madrid's Pescaderías Coruñesas group, and serves as the group's executive chef overall. Born in Valladolid, he came up through several Madrid kitchens, most formatively Goizeko Wellington, before joining Pescaderías Coruñesas roughly a decade ago. Biography

Early years

Murciego was born in Valladolid. He didn't set out to become a chef: a friend of his father offered him unpaid kitchen work at his restaurant, and from there he moved between restaurants across Madrid, including Goizeko Wellington, where he helped serve up to 150 diners a night with high-end raw ingredients.

Career

He joined Pescaderías Coruñesas roughly ten years ago, initially as the group built out its catering service, and became the group's executive chef, coordinating the kitchens across its restaurants while centering his own work on Desde 1911, which he's led since it opened in November 2021. Desde 1911 received its first Michelin star in 2024. On Opinionated About Dining's rankings it topped the '30 Best New European Restaurants' list in 2022, placed 5th on the Top Restaurants in Europe list in 2023 (also winning the prize for the biggest riser that year), 21st in 2024, 16th in 2025 and 31st in 2026.

Philosophy

Murciego says technique should only intensify a dish's own flavor, not mask it: he wants a diner eating carabinero prawn to taste unmistakably of carabinero. The kitchen leans on live coals and a wood-and-gas oven, and works only with fish and shellfish brought in that day from the group's own ports, without freezing or holding stock overnight.
