Diego Guerrero is a Basque-born chef (Vitoria, 1975) who was named head chef of Madrid's El Club Allard in 2003 and spent a decade there, winning it two Michelin stars, before leaving in October 2013. In 2014 he opened DSTAgE, his own restaurant in Madrid's Salesas neighbourhood, which now holds two Michelin stars, a Michelin Green Star (2025) and three Repsol soles. His cooking favors global sourcing and evolutionary technique over strict localism, served in an open kitchen visible from the dining room.

Biography
Early years
Guerrero was born in Vitoria in 1975, to a family with no background in cooking or hospitality. He trained at the Escuela de Zabalburu in Bilbao and worked in the kitchens of Martín Berasategui, El Bulli and Goizeko Kabi before becoming head chef of El Refor in Amurrio (Álava) at age 23.
Career
He joined El Club Allard in Madrid and was named head chef there in 2003, winning the restaurant a first Michelin star in 2007 and a second in 2011. He left in October 2013, after a decade running that kitchen, and opened DSTAgE on Calle Regueros in Madrid's Salesas neighbourhood on 2 July 2014. DSTAgE won its own first Michelin star in 2015 and a second in 2017, added a Michelin Green Star in 2025, and scored 90.5 points on La Liste 2025. In 2019 Guerrero also opened Dspeakeasy, a second, smaller project on Madrid's Calle Fernando VI.
Philosophy
Guerrero describes his cooking as evolutionary rather than rupturist: built on high-quality ingredients he doesn't restrict to local product, cooked in an open kitchen that lets diners watch as it happens. DSTAgE changes as many as 50 dishes a year, and sustainability runs through the kitchen too, with alternative proteins and ingredient parts that often get thrown out worked back into the menu.
