Martín Berasategui is Spain's most-decorated active chef with nine Michelin stars across four restaurants in 2026. His flagship in Lasarte-Oria has held three stars since 2001. In Barcelona he directs Lasarte (3 stars, with Paolo Casagrande as on-site head chef), runs the casual sibling Bera and the rooftop Terraza Verbena at the Monument Hotel (both led by head chef Gabriele Milani), and advises Fonda España at Hotel España in El Raval.

Biography

Early years

Born in 1960 in San Sebastián, Berasategui grew up at his family's Bodegón Alejandro in the city's old town, where he began cooking at 14. Between 15 and 27 he spent his free time training in France — at Les Prés d'Eugénie under Michel Guérard and at Le Louis XV in Monaco with Alain Ducasse, among others — building the technical foundation of his cuisine.

Career

In 1993 he opened the eponymous Martín Berasategui restaurant in Lasarte-Oria, just outside San Sebastián, with his wife Oneka Arregui. The first Michelin star came six months later, the second in 1996, and the third in 2001 — a status the restaurant has held continuously ever since. He has since expanded to M.B. at The Ritz-Carlton, Abama in Tenerife (two stars), Ola Martín Berasategui in Bilbao (one star), and Lasarte in Barcelona (three stars), among other ventures.

Philosophy

Berasategui is associated with technically meticulous Basque cuisine that prioritises product purity, restrained seasoning, and a focus on aromatic clarity. His tasting menus are built on long compositional arcs rather than single signature dishes.
