Martín Berasategui opens Fonda España in Hotel España's modernist dining room

Martín Berasategui has relaunched the historic Domènech i Montaner dining room at Hotel España as Fonda España, a product-led take on traditional Catalan cooking, with Edu Rodas as head chef. It opened 6 May 2026.

Martín Berasategui has taken over the historic modernist dining room of Hotel España — designed by Lluís Domènech i Montaner — and reopened it as Fonda España, which opened on 6 May 2026 with Edu Rodas as head chef. The idea is a modern fonda: honest, product-led cooking rooted in Catalan tradition.

The opening menu runs to dishes such as L'Escala anchovies, Russian salad with white shrimp, pork-trotter cannelloni and squid with its own ink over crispy rice. Hotel España stands on Carrer de Sant Pau, between the Ramblas and the Liceu. It is a separate project from Bera, Berasategui's more casual, all-day spot that opened at Monument Hotel in April.
