Paolo Casagrande is the Italian head chef of Lasarte in Barcelona, the city's first three-Michelin-star restaurant and the first in Catalonia to reach the level. He joined Martín Berasategui's group in 2003 and has led Lasarte's kitchen since 2012. The restaurant holds three stars (since 2017) and three Repsol Soles.

Biography

Early years

Born in 1979 in Susegana, near Treviso in Italy's Veneto region, Casagrande grew up cooking with a large extended family and trained at the Alfredo Beltrame Hospitality School in Vittorio Veneto. He worked in London from 1998, then in France — at Châteauneuf-du-Pape under Pierre Pommel and three years in Paris under Alain Solivérès — before Solivérès directed him toward Martín Berasategui.

Career

Casagrande joined Berasategui's team in 2003, starting at the flagship Martín Berasategui in Lasarte-Oria. Berasategui later put him in charge of opening M.B. at The Ritz-Carlton, Abama in Tenerife, where Casagrande earned his first Michelin star in 2009. After two years at Casta Diva Resort in Blevio on Lake Como, he arrived at Lasarte in Barcelona on 2 September 2012 with the explicit mission of pursuing a third star. The first came in November 2016 (2017 guide), making Lasarte the first three-Michelin-star restaurant in Catalonia. He has remained head chef ever since.

Philosophy

Casagrande is described in Lasarte's own words as 'the chef of emotions' — elegant, restrained, focused on precision and on a long compositional arc rather than spectacle. His cuisine combines Berasategui's Basque foundation with the technical rigor he developed in French haute cuisine.
