Ramón Freixa is a Catalan-born chef who ran Racó d'en Freixa in Barcelona (one Michelin star) before moving to Madrid in 2009 to open Ramón Freixa Madrid at Hotel Único, which held two Michelin stars until it closed in 2024 after 15 years. In July 2025 he opened Ramón Freixa Atelier, a 10-seat restaurant on Calle Velázquez in Madrid's Salamanca district, which received two Michelin stars and three Repsol soles in the 2026 guides, five months after opening. His cooking is built on what he calls 'producto, técnica y sentimiento': product, technique and emotion.

Biography
Early years
Freixa was born on 7 September 1971 in Castellfollit de Riubregós, a small village near Barcelona, where his family ran a bakery and he began preparing desserts as a child. His father, Josep Maria Freixa, was also a cook, and won El Racó d'en Freixa its Michelin star in 1988. Ramón studied hospitality management and direction at the Escola Superior d'Hosteleria i Turisme in Sant Pol de Mar, Barcelona, and trained in Belgium and France in the early 1990s.
Career
He joined the family restaurant, El Racó d'en Freixa in Barcelona, in 1994 and took over its kitchen completely in 1998, keeping the Michelin star his father had won in 1988, before moving to Madrid in 2009 to open Ramón Freixa Madrid at Hotel Único. That restaurant earned a first Michelin star in October 2009 and a second in 2010, and closed in 2024 after a 15-year run at the hotel. In July 2025 Freixa opened Ramón Freixa Atelier, a 10-seat restaurant on Calle Velázquez in Madrid's Salamanca district, alongside a second, separate concept, Ramón Freixa Tradición, in the same venue. He also leads the catering operations at two of Madrid's cultural institutions, the Teatro Real and the Museo del Prado.
Philosophy
Freixa describes his cooking as built on 'producto, técnica y sentimiento': product, technique and emotion. At Atelier he and a team of 12 run both kitchen and dining room around a U-shaped counter facing the open kitchen, serving two evolving tasting menus, Origen and a fully vegan menu, Origen Vegetalia.
