What does 'con encanto' mean for a Madrid restaurant?

The phrase describes a restaurant valued as much for its room as its cooking: a historic interior, a courtyard or garden, an unusual building put to a new use, or a small, closely designed dining room. It's a description of atmosphere rather than a formal award or category.

Why do so many of these rooms sit inside old buildings?

Central Madrid, especially districts like Centro and Salamanca, carries a large stock of 19th- and early-20th-century buildings, former palaces, shops, warehouses and taverns. Restaurant groups and chefs have increasingly taken over these spaces rather than building new, keeping the original architecture as part of the draw.

What's the difference between a taberna and a designed dining room?

A taberna is Madrid's traditional neighbourhood tavern, usually built around a bar, tiled walls and simple tables, serving home-style cooking. A designed dining room, often inside a hotel or a purpose-built restaurant, tends to bring in an interior designer and build the space around a specific concept.

Do hotel restaurants count as having character?

Yes. Madrid's grand hotels built formal dining rooms as part of their original architecture, and several now host contemporary kitchens inside those historic spaces, gilded ceilings, garden terraces and all.

We cross-checked editorial coverage of Madrid's most charming and photogenic restaurants, but wrote every entry from what that restaurant's own page documents about its building and interior, so specific architectural facts, like a founding year or a named designer, only appear where we could verify them. A number of similarly striking rooms turned up in the sources we checked but don't yet have a Guidavera page; we've noted those separately rather than guessing at their details.

Deessa is chef Quique Dacosta's first Madrid restaurant, set inside the Mandarin Oriental Ritz's Alfonso XIII salon in Jerónimos: a white, domed room with gold-leaf detailing and illuminated salt sculptures, plus a terrace that opens onto the hotel's garden. It earned a Michelin star eight months after opening and a second the year after, and now holds two stars and two Repsol Soles. Two tasting menus split the offering, Historical and Contemporary, the first drawing on classics from Dacosta's three-Michelin-star flagship in Denia, like the cubalibre de foie-gras, the second built new for the room. Expect red prawns from Denia served simply, turbot with Jerez wine, a seasonal mushroom risotto, and a caviar and fish roe selection finished with bread foam.

Lhardy has stood on Carrera de San Jerónimo, near Puerta del Sol, since 1839, when the Frenchman Emilio Huguenin Lhardy opened it first as a pastry shop before expanding into full meals. It claims a run of Madrid firsts: separate individual tables, silver cutlery and white tablecloths, plus the fixed-price menú del día concept still used across the city. The mahogany facade visible today dates to 1880, and the atmosphere is courtly and aristocratic, a journey to nineteenth-century Madrid. Over nearly two centuries its rooms have hosted artists, writers, politicians and nobility. The house signature is cocido madrileño, the Madrid stew, served with a homemade tomato sauce, and the attached shop runs its own sweet and savoury counters.

It began in 2013 on Calle Alcalá as Yugo Sushi&Kobe, a takeaway. Chef Julián Mármol has held a Michelin star here since 2019, chasing exclusive product from Alaska and Japan to Portugal and the Delta del Ebro. Two tasting menus run the offering, Clásicos del Bunker at €145 and Evolution at €175, the latter adding smoked caviar otoro nigiri and aged beef with kimchi and bone marrow. Elsewhere on the menu: negitoro and wagyu nigiri, black cod gyoza in miso, and foie gras nigiri with wild berries. Downstairs, the bunker room is intimate, with striking interior design built around the theme.

Coque takes up more than 1,000 square metres on Calle del Marqués del Riscal in Almagro, with a sequence of designed rooms that signal the visit goes beyond food alone. Diners move through the building in stages: a cocktail bar, the Ónix passage, an underground wine cellar, a sacristy and the open kitchen, before reaching the dining room itself, a quiet, elegant, refined space with polished service and a wine list the family treats as central. It's run by the third generation of the Sandoval family, Mario Sandoval in the kitchen, Juan Diego on the floor and Rafael in the cellar, and holds two Michelin stars, a Michelin Green Star and three Repsol Soles. The enduring signature is roasted suckling pig, tracing back to the rotisserie the family ran in Humanes de Madrid in 1976.

Corral de la Morería Gastronómico is the fine-dining side of the Corral de la Morería, the Madrid flamenco tablao that has run since 1956, founded by Manuel del Rey and now led by his wife, bailaora Blanca del Rey, and their sons Juan Manuel and Armando. The gastronomic restaurant works as its own venue within the same building: a quiet room of just four tables for no more than eight guests, on Calle de la Morería in Palacio, near the Palacio Real and the Teatro Real. Chef David García, from Bilbao, cooks Basque-rooted haute cuisine he calls cocina de raíz, built on carefully made broths, stocks and juices, and the restaurant has held a Michelin star since 2019 and three Repsol Soles since 2023. The cellar holds more than a thousand references of Jerez sherry. Next door, the tablao stages flamenco every night.

Ramón Freixa Tradición occupies the main floor of Velázquez 24 in Recoletos, opened by chef Ramón Freixa in July 2025 alongside his two-Michelin-star Ramón Freixa Atelier in the same building. Designed by Alejandra Pombo, the room holds four lounges, two private rooms and a cocktail bar, with a wine cellar and a ham-slicer bar by the entrance. It runs all day, 13:00 to 00:30, and the room adapts through the day, cheerful at midday, relaxed in the afternoon, more intimate at night; it's dog-friendly and works well for groups. It's listed in the Michelin Guide and holds one Repsol Sol. The menu is Freixa's tribute to Spanish home cooking, built on product, memory and slow fire: Iberian acorn-fed ham and croquettes, stews, rice dishes and casseroles, a catch of the day, and a section labelled Ramón's Favorites.

Le Bistroman Atelier opened in 2019 on Calle de la Amnistía in Palacio, next to the Teatro Real, the project of Stéphane del Río and Miguel Ángel García Marinelli, both sons of French mothers and Spanish fathers who built the menu around the French home cooking they grew up missing. Interior designer Javier Erlanz did the Provençal room in exposed brick, copper pans, braided garlic and chandeliers over fine upholstered seating, quiet, cosy and elegant with a curated playlist under the conversation. It's listed in the Michelin Guide, holds two Repsol Soles, and won best international cuisine at the 2024 Madrid Gastronomy Awards. The cooking stays classic rather than experimental, the traditional French bistro recipes del Río and García Marinelli grew up with, cooked with care.

Ovillo occupies a former leather-goods factory in Ciudad Jardín, chef Javier Muñoz-Calero Calderón's first solo project after years with Grupo Azotea, opened in the winter of 2019–20. High ceilings and strong ventilation make the room feel immense and luminous, with round tables spaced out by large planters, industrial but cozy and lit by natural light. The kitchen runs Alma Solidaria, a social-integration program with Fundación Raíces that employs young people aged 16 to 25 facing serious integration difficulties, and which won the Academia Madrileña de Gastronomía's Social Project Award in 2022. The menu runs to roasted chicken in a bread crust, anchovy with vinegared boquerón, and hake in a green-pea sauce; the callos con mongetas won the Premio a los Mejores Callos del Mundo, the best tripe stew in the world, in 2022.

9. Osa — A Michelin-starred kitchen in a converted riverside cottage

Osa opened in 2023 in a converted riverside cottage along the Manzanares, in Casa de Campo, and won a Michelin star that same November. Jorge Muñoz and Sara Peral, both trained at Mugaritz, spent two years planning it before Muñoz left his post at Picones de María to open the doors; the pair took the Cocinero Revelación prize at Madrid Fusión in 2024. The room holds a wine cellar upstairs and an aging chamber for hanging game and cured meats, the look clean and pared back, wood and travertine in neutral tones. Tasting menus are built around what the kitchen calls product trilogies: a balotina of black rooster, wild boar head and pistachio-studded pork belly from the charcuterie programme, Bedon trout smoked over apple wood, and raw wagyu tongue sliced tableside.

Desborre is chef Lucía Grávalos's personal project near the Teatro Real in Palacio, a small space she rehabilitated with care alongside wood and iron artisans, recovering old bricks, beams and doors for a room that reads cozy and refined rather than showy. Chef Lucía Grávalos opened it in spring 2024 as her second restaurant in Madrid. Grávalos, born in La Rioja, grew up at her grandmother's stove before working with Martín Berasategui, Dani García and Álvaro Salazar, picking up the Delantal de Oro and a Cocinera Revelación title in 2021. The kitchen is built around regenerative agriculture, free-range livestock and sustainable fishing, and it won Restaurante Más Sostenible at the 2025 Premios Metrópoli. The menu splits into sections called El Bar, La Huerta, El Mar and El Pasto: a torrezno suflé, biodynamically grown cogollos de Tudela lettuce, wild monkfish in tempura with tarragon beurre blanc, and koji-aged quail with orange shrub glaze.

Kuoco moved in 2025 from its original Kuoco 360º spot on Calle de San Bartolomé, where chef Rafa Bergamo and Andrés Correa opened it in 2016, into a larger room at Calle del Barquillo 30 in Chueca. The new space is industrial, with a metal ventilation structure crossing the original ceiling, a wine cellar on show at the entrance, and, at the back, the black marble bar brought over from the old San Bartolomé room for eating at the bar and cocktails. Bergamo, born in Caracas, runs the kitchen, Correa runs the dining room, and Paula Prokopiak leads the wine list. It holds one Sol in the Guía Repsol and is recommended in the Michelin Guide. The carta runs from croquettes and rolls to ceviche, robata-grilled corvina and a Bresse pigeon in a Franco-Nikkei curry, alongside the Attraverso tasting menu.

Smoked Room hides inside Dani García's Leña Madrid, in the Hotel Hyatt Regency Hesperia on Paseo de la Castellana, fourteen seats in total: a Japanese-style bar for six, plus two tables tucked into a semi-hidden reserved area, giving the room a speakeasy feel. Lighting stays dim and the staging theatrical, the open kitchen and counter putting the cooking on full view. It made its Michelin debut by taking two stars at once, in under six months, something the guide hadn't done in Spain since 1936. Massimiliano Delle Vedove runs the kitchen with Japanese-influenced technique, including fish aged by Josh Niland's sukibiki method, cooking an omakase-style tasting menu built around fire and smoke: quisquillas in beurre noisette, a reinterpreted tomate nitro with sturgeon foam, horseradish and caviar, and ginger chawanmushi with grilled squid.

Tramo took over what used to be El Garaje Hermético, a well-known venue from Madrid's Movida years, opening in November 2023 on Calle Eugenio Salazar in Ciudad Jardín. Raúl Sánchez is executive chef. Architecture studio Selgascano and designer Andreu Carulla kept the original structure with minimal intervention, reusing the old garage's own materials alongside bioconstruction for an industrial, romantic room with warm lighting. It's the second Madrid project from Felipe Turell and Javier Antequera's Proyectos Conscientes, after Mo de Movimiento, and it holds a Michelin Green Star for sourcing that favours small producers nearby. The wood-fire grill menu runs to smoked trout porrusalda with leeks and dill, a steak tartare, croquetas made with lacón, kale and ajada sauce, a surf-and-turf pairing of pork jowl and razor clams, and artichokes with cured egg yolk.

Casa Lucio opened on Cava Baja in La Latina in November 1974, when Lucio Blázquez, who'd come to Madrid at twelve to work at the Mesón del Segoviano, took over the space from its owner, doña Petra. Its walls have housed a tavern since 1720, tiled and lined with wooden tables that have hosted a steady stream of diners ever since, a bar at the entrance and two floors above it. Lucio still prefers to be called a tabernero, and his children María del Carmen, Fernando and Javier run it alongside him today. The cooking stays unfussy and rooted in eggs, guisos and the market: huevos estrellados (huevos rotos), fried eggs over potatoes, and a Revuelto Lucio of scrambled eggs with mushrooms and shrimp.
