The Story
Yugo the Bunker is a two-part restaurant: an upstairs izakaya, casual and manga-bright, and a hidden downstairs bunker built as a small rebellion against a world that moves too fast. A few firm house rules keep the focus: everyone at a table orders the same tasting menu, only guests aged eight and up are seated, and there's no vegetarian or vegan option on the card.
The Cuisine
Beyond the negitoro and wagyu nigiri, there's black cod gyoza in miso, foie gras nigiri with wild berries, and on the Evolution menu, smoked caviar otoro nigiri and aged beef with kimchi and bone marrow. Two tasting menus split the offering: Clásicos del Bunker at €145 and Evolution at €175.
The History
Yugo began in 2013 on Calle Alcalá as Yugo Sushi&Kobe, a takeaway that gradually turned into a private club run from the basement. In 2015 it moved to Calle San Blas, in Barrio de las Letras, where the idea split into the two spaces it has today: the izakaya upstairs, open to all, and the bunker downstairs, originally the club room. The Michelin star followed in the 2019 guide, announced in November 2018, and Yugo has kept it every year since.

Yugo the Bunker is one concept in two spaces. Upstairs is the izakaya, a Japanese tavern with the casual, street feel of the classic original, styled as if lifted from the pages of a manga. Downstairs, away from prying eyes, is a faithful reproduction of a Japanese bunker, which the restaurant describes as its rebellion against a world moving too fast to leave time to enjoy life.
Chef Julián Mármol's restaurant has held a Michelin star every year since 2019, and has been recommended by the Guía Repsol since 2022.
Two Tasting Menus
There are two tasting menus, and everyone at the table orders the same one. Menú Clásicos del Bunker (€145) is an anthology of the dishes that have refused to leave over the years: negitoro with crispy wonton, shime-saba, a sashimi moriawase, toro nigiri with crispy plankton, a sardine shu-mai with galangal cream and black cod misoyaki gyoza among them. Menú Evolution (€175) gathers the newest creations and is renewed each season, most recently for spring and summer; it has included smoked-caviar otoro nigiri and aged beef with kimchi and bone marrow.
The kitchen hunts for exclusive produce from suppliers in Alaska, Japan, Portugal and the Ebro Delta, and treats Japanese cuisine as a philosophy: the quality of the raw material demands preparations that respect its purity.

Either menu can be paired with wine (€65), sake (€70) or beer (€30), drawn from a selection of sake, wine and Champagne.

The Team
Julián Mármol, born in Madrid, is a self-taught chef. He spent some 15 years as a commercial director at Nissan before cooking took over: guests at private dinners he cooked started asking for him by name, and his love of sushi became a second career. He treats each dish as a blank canvas, in the Japanese way that nothing should overshadow the main ingredient, and chases exclusive product from Alaska and Japan to Portugal and the Delta del Ebro. Beyond Yugo, his projects have included Kuu, Eighth, Monchis at the Food Hall Canalejas and Godai in Menorca.
