Sourced
Sustainable Restaurants in Madrid
5 Sourced Gold and 20 Sourced Silver restaurants in Madrid, verified against Slow Food, Biosphere Sustainable Tourism, We're Smart Green Guide, and primary-source restaurant materials. Every claim traces back to the restaurant's own publication, the producer's own publication, or an official certifying body.
Sourced Gold
One or more verified formal recognitions (a Michelin Green Star, We're Smart Green Guide, Biosphere Certified, Slow Food membership, etc.) plus own-site sustainability documentation or named producers verifiable at primary source.
Sourced Silver
Either a single formal recognition with verbatim primary-source confirmation, or a strong own-site sourcing claim (named producers, KM0 self-positioning, CCPAE mention, own farm/garden) without the secondary cross-verification needed for Gold.
Sourced Gold: 5 restaurants
Each card shows the recognition or producer-transparency anchor that earned the Gold tier.

Supplied by the group's own Fazenda Rubaiyat, which the group describes as its "control total" over the beef it serves rather than an outside supplier.

Lhardy

Sourced Silver: 20 restaurants
Strong sourcing signal verified at primary source, but without the multi-source recognition stack that defines Gold.

Attributes vegetables to a named Madrid organic market garden and cheese to a named affineur, on its own menu.
Angelita
The family's own traditional huerto in Zamora is stated to supply the kitchen and bar.

El Señor Martín
States KM0 sourcing explicitly and ties it to small-boat artisanal fishing.
El Invernadero
Holds two formal recognitions: the We're Smart Green Guide's world number-one ranking and a Michelin Green Star. No named producers are published, so it sits in Silver rather than Gold.

Pescaderías Coruñesas
Madrid fish house trading since 1911 that owns the restaurants it supplies
A Madrid fish house trading since 1911. It describes a daily presence at Spain's main fishing ports ("Nuestra presencia diaria en los principales puertos pesqueros nacionales nos permiten elegir desde hace más de 100 años los mejores productos") and lists O'Pazo, El Pescador, Filandón, Lhardy, Lhardy Catering and Desde 1911 under "Nuestros restaurantes", so the fish supplier and the dining rooms are one business.
Supplies 4 restaurants
- O'Pazo, Group-owned; fish landed through the Coruñesas counter
- Lhardy, Group-owned; smoked salmon served under the Coruñesas name
- Filandón, Group-owned; "buscamos la mejor pesca del día"
- Desde 1911, Group-owned; named for the house's founding year
Sapiens Sostenible
Organic market garden in the Soto del Grillo agroecological park, east of Madrid
An organic market garden worked by Gonzalo in the Parque Agroecológico Soto del Grillo, the municipal agroecological park at Rivas-Vaciamadrid on the Jarama flood plain. Desborre describes it as "Gonzalo cultiva con mimo en Madrid en el parque agroecológico"; Lakasa lists its vegetables on the menu as "la huerta ecológica Sapiens Sostenible (Madrid)". It is the only producer in this registry growing inside the Comunidad de Madrid itself.
Aquanaria
Atlantic sea bass producer supplying restaurants internationally
A sea bass producer farming in the open Atlantic, which positions itself as "la alternativa sostenible a la lubina salvaje" and describes its fish as large-calibre, firm-textured and free of anisakis. Two Madrid venues in this registry name it on the plate rather than listing sea bass generically.
Supplies 2 restaurants
- Varra, Lomo de lubina Aquanaria with beurre blanc and celeriac
- Yugo the Bunker, Usuzukuri and sashimi moriawase
Joselito
Iberico pork house; part-owner of the Sula Restauración group
An iberico pork house named on the menus of two Sourced Madrid venues. At A'Barra the relationship is structural rather than commercial: the restaurant belongs to Sula Restauración, described on its own site as "la alianza entre Joselito y La Catedral de Navarra".
Bernard Antony (Fromagerie Antony)
Alsatian cheese affineur
An Alsatian affineur whose cheeses are named individually on two Madrid menus in this registry: Lakasa lists cheeses "afinados por Bernard y Jean François Antony", and Pabu describes its board as "fruto de nuestra amistad con Fromagerie Antony".
Granja de los Monjes
Vegetable and potato grower named on two group-owned Madrid menus
Named on the menus of two Pescaderías Coruñesas restaurants: Lhardy lists "Ensalada de tomates de Granja de los Monjes" and "Patatas de Granja de los Monjes a la inglesa", and O'Pazo its "patatas fritas 'finísimas y crujientes' de Granja de los Monjes". No own website was found during the audit, so no further detail is published here.
More verified producers
Fazenda Rubaiyat
The Rubaiyat group's own cattle farm, supplying its own dining rooms
The Rubaiyat group's own farm rather than an outside supplier: "Nuestra fazenda no es solo un proveedor, es la garantía de que mantenemos los más altos estándares en toda la cadena productiva." The group states its cattle are raised on natural pasture with room to move freely and a grass-based diet.
Supplies 1 restaurant
- Rubaiyat Madrid, Beef from the group's own fazenda
Pescados Loureda
Galician fish and shellfish, working the Coruña quay since 1975

Supplies 1 restaurant
- Desborre, Galician fish and shellfish
Panática
Stone-ground organic flours, milled for bread developed with the kitchen

Supplies 1 restaurant
- Desborre, Organic eggs
How we verify
Every claim on this page traces back to a primary source. We cross-check restaurant sustainability claims against the following canonical bodies. If a claim only appears in press paraphrases or aggregator summaries, we don't include it.
CAEM (Comité de Agricultura Ecológica de la Comunidad de Madrid)
The Comunidad de Madrid's official organic control authority under EU Regulation 2018/848, and Madrid's counterpart to Catalonia's CCPAE. Publishes a searchable register of certified operators (468 records at the time of audit) together with certified products and Certificates of Conformity, so a producer's organic claim can be checked by name.
We're Smart Green Guide
International guide ranking restaurants on their creative and sustainable use of vegetables, awarding one to five radishes plus Pure Plants tiers. El Invernadero is listed at №1 in the Top 100 for 2025.
DO Vinos de Madrid
Consejo Regulador of the Vinos de Madrid denomination, created in 1990, covering the Arganda, Navalcarnero, San Martín de Valdeiglesias and El Molar sub-zones. Verifies wine-origin claims made by Madrid venues.
Parque Agroecológico Soto del Grillo (Rivas-Vaciamadrid)
Municipal agroecological park on the Jarama flood plain, the growing base for several market gardens that supply Madrid kitchens, including Sapiens Sostenible.
What we exclude
Madrid has no equivalent of Slow Food Catalunya's KM0 member directory: the Slow Food Madrid restaurant list is an unpublished placeholder at the time of audit, and España Slow's KM0 page sets out the 40%-within-100km rule without naming restaurants. That absence is why this registry is built almost entirely from venues' own published materials rather than from third-party member lists, and why its Gold tier is small. We do not count a brand name appearing on a single dish: a Joselito croquette or a DOP pecorino on an Italian menu is a product choice, not a sourcing relationship. We do not count generic "cocina de mercado", "producto de temporada" or "materia prima de calidad" language, aggregator listings, or press write-ups. Eleven venues that surfaced in the sweep were held back on these grounds, and one, Coque, was excluded because its only sourcing statement covers the grapes behind a single laboratory-derived ingredient rather than its larder.
Audit completed 2026-08-18. Scope: All 152 ranked Madrid venues carrying a website were swept for sourcing language on their own sites, and every candidate quote was re-checked at its cited URL by an adversarial verification pass before tiering. Gold requires the estate/vertical-integration model or multiple formal recognitions plus named producers; Silver requires a single verified formal recognition, multiple named producers, explicit KM0 language, or an own garden.. Version 1.0.
