The Story
Surtopía is what the restaurant calls a little piece of Andalusia in Madrid's Castellana, where the food of Sanlúcar and the wines of the Marco de Jerez take the lead. The wine list holds to its own line, away from fashion, built around exclusive generoso wines, still Andalusian wines from native grapes like palomino and tintilla de Rota, and a selection of small-producer champagnes.
The Cuisine
The kitchen sources seafood from the markets of Cádiz and Almería, and meat from Huelva and Córdoba estates. Beyond the shrimp pancakes and marinated sardines, the menu runs to an oversized camarones tortilla the restaurant considers possibly its best dish, a tuna tartare with garlic cream, pine nuts and melon, urta prepared roteña style, and pickled ray cheeks with sugar snap peas and onion.
The Story
José Calleja, from Sanlúcar de Barrameda, spent more than 25 years in Madrid kitchens, including El Olivo, Larumbe, La Cuchara de Rivas and Goizeko Kabi, before opening Surtopía in January 2012. He calls it a little piece of Andalusia, where the food of Sanlúcar and the wines of the Marco de Jerez take the lead. It holds one Repsol Sol. As the restaurant jokes, you won't feel quite as if you were in Bajo de Guía or the Plaza del Cabildo, but it will do everything to make you come back.
The Kitchen
The produce comes mainly from Andalusia: fish and shellfish from the markets of Cádiz and Almería, meat and Ibérico from the dehesas of Huelva and Córdoba, cheeses from the Sierra de Grazalema, oils and olives from Seville and Jaén, wines from Málaga, and even a dessert made with piononos from Granada.
The carta opens with shrimp fritters 'Plaza del Cabildo' (€4.50 each), salmorejo, a king-prawn Russian salad, boquerones in ajilimón, adobo cazón, mackerel roe in amontillado tempura, puntillitas, choco, fried monkfish cheeks and skate wing. Mains include braised corvina Rota-style, sailor's rice, Almería-style squid, aged-beef meatballs in oloroso jus and Ibérico cabecero glazed in sherry vinegar, and many dishes come as a half or full portion. The house recommends its tasting menu as the best way in: six seasonal courses for €80, served to the whole table, with the Gran Sherry pairing for €35 and cheeses for €8.
The Wine List
The wine list follows its own line, away from fashion: exclusive generoso wines, from a long run of manzanillas upward, still Andalusian wines from native grapes such as palomino and tintilla de Rota, and a selection of small-producer Champagnes.
In practice it opens, as a Sanlúcar house should, with a page of generosos by the glass and bottle. There are manzanillas from Muy Fina and Solear, including Solear en Rama, to Pastora, Levante, Sacristía and Nave Trinidad; finos from Pando and Tío Pepe to Tradición; and a run of amontillados, olorosos and palo cortados that climbs to VORS bottlings from Tradición, Del Duque, Jalifa and Dos Cortados, most available by the glass. After that come grower Champagnes, still Andalusian wines, and a dessert list that reaches VORS creams and Pedro Ximénez.
The September 2026 Carta
The current carta, published for September 2026, is Andalusian from start to finish, with most starters as a half or full ration. It opens with hand-carved acorn-fed Ibérico ham, sheep's and goat's cheeses from the Sierra de Grazalema, a Cádiz-style chicharrón of pork jowl with citrus zest, a prawn ensaladilla made with mayonnaise from the prawns' own escabeche, anchovies al ajilimón in a manzanilla tempura, fried baby squid from the bay with Ibérico broken eggs, and the single tortillita de camarones at €4.50 each.
Mains run from braised corvina with a roteña sauce of mantis shrimp and jalapeño, and baked urta in a Sevillian piriñaca, to a seafood rice with 'fruits of the Guadalquivir', skate in a palo cortado pil pil with saffron and young garlic, monkfish cheeks with a house tartare, aged-beef meatballs with oloroso and mushrooms, Ibérico cabecero glazed with old Jerez vinegar, and a Sanlúcar-style tripe stew with chickpeas, mostly €25 to €33. The six-course tasting menu costs €80, with the Gran Sherry pairing for €35 more, and desserts include an Andalusian tiramisù of pionono, Payoya cream, coffee and Pedro Ximénez, a steamed gluten-free brownie, and a 'Rebujito de Feria' dessert of lime, lemon, mint and manzanilla.
Booking Surtopía
Surtopía is open Tuesday to Saturday from 13:00, and closed on Sunday and Monday. Tables are for lunch and dinner; for a quick bite there is the bar.
