Apura is a sanguchería on Calle del General Oraá, born from Mario Céspedes' dream of opening a small sandwich bar in Madrid like the ones on the streets of his native Lima. The menu runs to pork chicharrón bocadillos with fried sweet potato and salsa criolla, an Iberian cheek brioche, tempura squid with rocoto, burgers and piqueos, with a big terrace and a lively bar into the evening.

The Story

Mario Céspedes dreamed of a small sanguchería in Madrid in the style of the ones all over his native Lima, where he used to meet friends for a comforting sandwich. His partner Conchi, his main support in the business, remembers the pan con chicharrón breakfasts they eat visiting Mario's family in Peru.

The Cuisine

Peruvian sandwiches and Latin flavours: a chicharrón bocadillo with fried camote and salsa criolla, an Iberian pork cheek brioche with sesame and mint, tempura squid with rocoto, and burgers including truffle, smoked, foie and a vegetarian one with rocoto cream. Piqueos run to angus meatballs with ají, tempura prawns, guacamole and crispy chicken.
