Vinology Zurbano is a wine bar and restaurant on Calle de Zurbano in Chamberí, opened in 2024 as the second space of Vinology, the wine company sommelière Pilar Oltra founded in 2010. It pours more than 50 wines by the glass from a list of several hundred bottles, mostly Spanish with French and Argentine picks, alongside seasonal cooking, wine flights and pairing dinners. About Vinology

The Story

Vinology started in 2010 as Pilar Oltra's wine-culture company, running tastings and wine events, before it had a home of its own. Its first physical space opened in 2022 in the Barrio de Salamanca (Calle Conde de Aranda 11), and Zurbano followed in 2024. Oltra was born in Argentina to Spanish winegrowers, trained in France, the US and England, and is a certified sommelière with WSET 3 and three years of study with the Institute of Masters of Wine in London; she has worked harvests in Burgundy and Argentina and consulted in the US, France and Spain. Her stated aim is to share wine culture without snobbery, putting growers, landscape and territory at the centre.

The Cuisine

Seasonal, product-led cooking designed to sit alongside the wine: bar snacks all day, then a kitchen menu of salads, tartares, braises and grilled meats at lunch and dinner.

The Bar and the Kitchen

The bar menu runs all day: a Gilda XL with red tuna and anchovy, anchovy on brioche with Ibérico jowl, a tortilla pincho with caramelised onion, a hand-cut beef empanada with salsa criolla (a nod to Oltra's Argentine roots), a pastrami and Gruyère bikini, and boards of artisan cheeses, Arturo Sánchez Ibérico charcuterie or León cecina, with sourdough and house-smoked butter. The kitchen opens 13:00 to 16:00 and 19:00 to 23:00 with dishes like the house ensaladilla, confit leek with romesco, red-prawn tiradito with Manzanilla, red tuna tartare with almond mazamorra and hot red-wine granita, Galician rock octopus roasted in red wine, slow-braised oxtail vol-au-vent for two, grilled sweetbreads, Arturo Sánchez Ibérico presa and a one-kilo Simmental txuleta.

Tastings, Flights and Coravin

Wine education is half the point. Vinology runs a monthly calendar of tasting dinners with visiting producers (October 2026's included Algueira from the Ribera Sacra, Barolo with Virna Borgogno, Matías Michelini from Gualtallary and Verum's Elías López Montero), an introductory Spanish wine workshop in English, and wine flights of four Spanish whites or reds. There are also pairing menus in three, four or five steps, a Coravin system for pouring rare bottles by the glass, a members' club, and gift cards that can be spent on meals, tastings or bottles.
