Background

About Goicolea

The Story

Goicolea opened on Calle de Génova in autumn 2025, the project of co-owner Cristina Goicolea, who brings more than forty years in hospitality, from food importing to running restaurants. Her nephew, Mikel Goikolea, runs the kitchen, and the dining rooms are staged by Bilbao artist Ignacio Goitia.

The Cuisine

The kitchen works Basque roots through French technique, with wild red tuna among the signatures.

How it cooks

The cooking brings the flavours of the north to Madrid through French technique, with wild red tuna among the signatures. Alongside the carta, some dishes are off-menu and sung at the table, and much of the produce comes from small, trusted suppliers. The Michelin Guide added it to its Madrid selection in September 2026.

The Team

The kitchen is led by executive chef Mikel Goikolea, who trained at the three-Michelin-star Azurmendi, with Esteban Martínez as head chef.

Goicolea Dining Experience

Each dining room is staged as its own scene by Bilbao artist Ignacio Goitia, telling a separate story over a shared boiserie backdrop, for a feel that reads as designed and theatrical rather than plain. It sits on Calle de Génova near Plaza de Colón, run by co-owner Cristina Goicolea.

Getting There

Calle de Génova 7, by Plaza de Alonso Martínez, in the Almagro corner of Chamberí, a couple of minutes from Alonso Martínez metro.

Nearby

Almagro is embassy Madrid: broad streets, old money, and a hush the rest of the centre does not have. The restaurants match, with polished rooms, careful service and kitchens that do not need to shout. It sits between Chueca and Salamanca without quite belonging to either.
