The Story
Virrey brings the cooking of northern Spain to Almagro, positioning itself as a restaurant for lovers of the north and for travellers after good food close to home. A private room for eight, decorated with a marine theme, sits beside the kitchen.
The Cuisine
The kitchen works only with fresh produce from the best lonjas, market gardens and pastures, respecting the seasons. Chef Carlos Fernández-Miranda, from Gijón and with an international career, builds the menu from the traditional recipes he grew up with: stews, oven-baked fish, tapas and raciones.
The Carta
It opens with national shellfish of the day (Nathalie et Sébastien oysters, Asturian winkles, red and white prawns by the 100 g) and aperitivos like an XXL gilda of boquerón, anchovy, tuna sashimi and cod, Santoña anchovies, Cinco Jotas ham and three versions of ensaladilla. Then come northern classics, among them pastel de cabracho, Tudela artichokes, Celeiro hake fritters and green beans with Ibérico ham, and mains such as roast beef 'La Pondala' style with mash, grilled bluefin tuna entrecôte with romesco, Celeiro hake a la plancha or in salsa verde, hooked wild fish a la bilbaína, a 500 g ribeye and a baked red-prawn rice for two.
Tasting Menu and Bar
At dinner there's 'Los caprichos de Virrey', a €45 tasting menu running from an oyster and a tomato tartare through a Galician scallop, the croquetas and a bluefin tartare to sirloin with garlic and chilli, sea bass in the house sauce and a Cantabrian tres leches cake. Between 16:00 and 20:00 a shorter bar carta takes over, with gildas, empanada of northern bonito, tortilla, tostas, croquetas by the piece and northern cheeses.
Practicalities
Open every day from 13:00 to 01:00. Book through the website or call 911 17 70 10; the terrace carries a 10% supplement, and the private room for eight next to the kitchen can be reserved for meetings and celebrations. Group menus are available.
