Uskar takes its name from what the Moors called the Granada town of Huéscar some 800 years ago, and the kitchen leans on that land's sheep-farming tradition and spiced, Moorish-tinged flavours, with an international touch. It's run by José Miguel and Rita, a married couple who built their life around hospitality, on the corner of Calle Alonso del Barco and Sebastián Elcano near the Glorieta de Embajadores, and it holds a Solete in the Guía Repsol. The Guía Repsol recommends the IGP Segureño lamb and bluefin tuna from the Strait; the wine cellar has grown to more than 100 references and over 170 grape varieties, and service runs straight through from 13:00 to midnight, Tuesday to Saturday.

About Uskar

The Story

José Miguel came to hospitality as a teenager, in a summer of dish-washing in Menorca that started, as he tells it laughing, as a punishment and became a vocation; kitchens, dining rooms, hotels and bars in Valencia, Málaga and Madrid followed. His wife Rita later left her own profession to join the project and now runs the numbers as well as the floor. Their motto is 'cocina con alma', cooking with soul. The name is a tribute to Huéscar, a frontier town in the Nasrid kingdom of Granada whose cooking still carries centuries of Moorish spices, techniques and lamb. Uskar holds a Solete in the Guía Repsol.

The Cuisine

De mercado, de autor: market-driven, chef-led cooking that refers back to the owners' southern roots, to traditional food and to slow cooking, with modern and international touches. IGP Segureño lamb and Strait of Gibraltar bluefin tuna are the headline products.

What to Order

Start with a gilda with pickled-mussel pipirrana, croquetas of baby squid, ham or txuleta by the piece, tortillitas de camarón and a board of cheeses from Huéscar. Then roast peppers with boquerones, the 'chino-cordobesa' roast aubergine, crisp torreznos with kimchi mayonnaise or a beef tenderloin tartare with a fried egg. The big plates are a roast shoulder of IGP Segureño lamb for two, an arroz del senyoret, cannelloni of cheek in red curry with coconut béchamel, Iberian presa from the grill and bluefin tuna sold by weight. Recent off-menu dishes have included bluefin tuna parpatana and stuffed lamb shoulder.

Wine and More

The cellar has grown alongside the kitchen to more than 100 references and 170-plus grape varieties, with the aim of representing every corner of Spain; wine is the passion of Raúl on the team. Aperitifs include an Andalusian PX vermouth, manzanilla, cava, crémant and Taittinger by the glass. Uskar also runs tastings and tasting-menu gift vouchers, and sells its Segureño lamb shoulder to finish at home.
