About Valdivieso

The Story

Valdivieso Cocina con Alma began in 2014 with Carlos Valdivieso's dream of turning a love of food and wine into a way of life. The idea is to combine the traditions of the south, and of good wine, with modern touches, using seasonal produce from his native Granada handled with creative, free-spirited technique. The house says the team and the produce are the soul of the kitchen, hence the name, and it holds a Solete in the Guía Repsol.

The Cuisine

Creative Mediterranean cooking that leans on seasonal produce from the south, Granada and Andalusia especially. The 'Cocina con Alma' name frames the team and the produce as the heart of the kitchen.

The Carta

From Granada comes the signature stuffed tomato with basil cream, garlic cracker and truffled burrata (€21.50). To share there are anchovy gildas, Santoña 00 anchovies, hand-cut Ibérico ham and croquetas of txangurro, beef or boletus, plus confit artichokes gratinated with Mahón cheese, truffle alioli and pea cream, and shiitake with black garlic and honey alioli. From the sea, a Moroccan-marinated roast hake on onion cream with spiced strawberry-banana foam, and a sea-bass fry with kimchi and lime; the socarrat rice comes with duck magret, seasonal mushrooms and ras el hanout mayonnaise. Meats include half a rack of slow-cooked pork ribs in a chocolate and lamb sauce, a Thai-style bourbon-glazed Ibérico abanico, a 300 g lomo bajo and the Valdi burger. Desserts run from a Manchego cheesecake and an 'Infancia Andaluza' coulant with olive oil and salt to a puff-pastry apple tart and a tiramisu finished with coffee at the table.

Wine and Tastings

The house professes a deep respect, almost love, for Spanish wine, especially from the south. The list runs from Granada's Altiplano de Sierra Nevada and Cádiz wines, including a Tintilla de Rota aged in amphora, to Madrid, Mallorca, Priorat, Terra Alta, Ribeira Sacra, Ribera del Duero, Rioja and Abadía Retuerta, with Jerez sweet wines to finish. New bottles come in constantly, and the restaurant regularly hosts what it calls legendary tastings.

Hours

Valdivieso opens Tuesday for lunch, Wednesday to Saturday for lunch (12:00 to 16:00) and dinner (19:00 to midnight), and Sunday for lunch from 12:30; it closes on Monday and takes a summer break of a few weeks from mid-July. Book online or on 910 70 34 76.
