Background
About Bardero
The Story
Bardero takes its name from Argentine slang for someone who stirs things up, and the kitchen runs with that spirit: a cosmopolitan mix that nods to modern Madrid without losing traditional flavours. If you can't get a table in the dining room, the bar takes walk-ins.
The Cuisine
Fusion with a Mediterranean base: the restaurant describes its cooking as a mix of Asian, Latin American and Mediterranean flavours, 'sin etiquetas', across a carta built for sharing.
What's on the Carta
The carta mixes the three strands freely. There are Ossau-Iraty cheese and spinach buñuelos in tempura, burrata with salt-baked yellow beetroot and roast vegetables, a cured-trout ceviche with coconut milk, passion fruit and curry, red tuna tartare flambéed with ají amarillo over somen noodles, and a Japanese-style corvina tiradito with wasabi mayo and soy caviar. Bigger plates run from a tempura eel taco with quail egg and Ibérico bacon, Huelva prawns with broken eggs, kimchi and Joselito jowl, and curried mussels with fregola, to octopus with kimchi and roast-potato gnocchi, a boletus rice with salt-cod cocochas al pil-pil, botarga and prawn noodles, a duck foie brioche with kabayaki pig's trotters, an Ibérico katsu sando, grilled veal sweetbreads, a 350g Argentine Angus bife and Ibérico pluma with miso and lime.
Bar Without Bookings and Alto Bardero
The dining room takes reservations, and if you haven't managed to book, the bar is kept for walk-ins so you can still try the 'bardero' style. The team also runs Alto Bardero in central Madrid.
