Alto Bardero opened in early 2025 on Plaza de Puerta de Moros in La Latina, in the much-loved premises that housed Juana La Loca, and it holds a Solete in the Guía Repsol. Chefs León Bonasso and Pablo Paternostro, who met in that same kitchen and founded Bardero in Arganzuela in 2021, run a front bar of hot and cold pintxos with no bookings and a dining room for Mediterranean cooking without labels, with Latin American and Asian touches. The juicy, barely set tortilla with confit onion is a house fixture.

About Alto Bardero
The Story
The name is Argentine slang: a 'bardero' stirs things up, and Paternostro was nicknamed 'alto bardero', a big troublemaker, as a child. For León Bonasso the opening was a homecoming: he came to the barrio in 2004 with Juana La Loca, the restaurant his father founded on this site, and was tied to it for almost twenty years; it was there that he met Pablo Paternostro, with whom he cooked for seven years. In 2021 the two opened Bardero in Arganzuela, and when the chance came to return to the old premises, they took it. It holds a Solete in the Guía Repsol.
The Cuisine
Mediterranean cooking without labels, with Latin American and Asian influences, in two formats: pintxos at the bar and a carta for sharing in the dining room. Bardero classics sit alongside dishes created for this space.
At the Bar
The pintxos rotate, cold and hot, straight from the kitchen: a truffled-egg brioche with boletus cream and white butifarra, a scamorza ravioli with duck confit and pear chutney, smoked salmon with kabayaki sauce and tempura enoki, roast beef with anchovy and artichoke tartare, a Cantabrian boquerón toast with Joselito pork jowl, and the tortilla de patatas with confit onion, served juicy and barely set.
In the Dining Room
The carta runs from a 'Japanese-style' corvina tiradito with wasabi mayo and soy caviar, a tempura eel taco with quail egg, mussels with curry cream and fregola sarda, and octopus kimchi with roast-potato gnocchi, to Idiazábal buñuelos, a roast-artichoke focaccia with Payoyo cream, prawn and sriracha dumplings with sherry consommé, a creamy saffron rice with stewed squid and pig's trotters, and an Argentine Angus bife from the grill. Desserts include a lemon-pie pavlova with passion fruit, a dark chocolate cake and an Argentine dulce de leche volcano with banana ice cream. The wine list of about 25 references, many by the glass, favours young projects, natural wines and small producers, with an Argentine selection.

Alto Bardero opens Tuesday to Sunday for lunch (13:00 to 16:30) and dinner (20:00 to 23:30), and closes on Monday. Book the dining room online; the bar is first come, first served.

Light, neutral tones and wood. At the entrance, a long bar with glass cases of pintxos and high tables works without reservations; the dining room behind has low tables and banquettes and can be booked.
