Juana La Loca opened in 2001 on Plaza de la Puerta de Moros in La Latina and made its name with a potato tortilla built on slowly confited onion. The original closed in March 2024, and the brand reopened at Calle de Recoletos 10 in Salamanca under partner Mariano Tato, with three times the space, the same tortilla and a carta of pintxos and shared plates. It holds a Solete in the Guía Repsol.

About Juana La Loca

The Story

Juana La Loca was founded in 2001 by Uruguayan mother and son Isabel Tocchetti and Filippo Bonasso on Plaza de la Puerta de Moros, next to the Mercado de la Cebada in La Latina. Over two decades the tortilla turned it into one of the city's best-known pintxo bars, and it earned a Solete in the Guía Repsol. It closed without warning in March 2024. Mariano Tato, a Uruguayan who had joined later as a partner, carried the name to Calle de Recoletos, which was open by February 2025 in a larger room: the team said they had looked for space around La Latina without success. In Tato's words, the essence is the same and so are the prices. The brand has since added a second room at Menorca 3, joined with the nightlife bar La Peligrosa, with dinner, live music and a Johnnie Walker listening room.

The Cuisine

Spanish cooking with Peruvian, Japanese and Basque touches, served as pintxos and plates to share. The house recommends ordering several and passing them around. The tortilla is the anchor: made the same day, never held over, and built on onion confited slowly at a set temperature, which gives it a sweet edge. The carta is published on the website in Spanish and English.
