About Cedrón Wine Bar

The Story

Cedrón is the wine bar of Gustavo Radiciotti, its founding partner and sommelier, who runs the floor and steers each table through the list. It calls itself more than a wine bar and a restaurant, and frames the point as celebrating the producers as much as what they make. The room is in a nineteenth-century building in La Latina, behind its original doors and window, and the stone in the walls is a piece of Madrid's eleventh-century Christian wall. The name is shared with Juan Cedrón, the priest who is said to have planted the first vine in Argentina, in Santiago del Estero around 1580.

The Cuisine

Short carta, product first, Mediterranean in inspiration with what the venue calls rioplatense nostalgia. The carta runs to a milanesa served a la napolitana with ibérico pork, ceviche, entraña, vitel toné and chocotorta for dessert, with a salt-cod croqueta among the starters. The wine leans Spanish and Argentine, mostly from small growers working organically or biodynamically, with natural, non-intrusive winemaking and plenty by the glass.

Cedrón is on Calle del Almendro, in the Barrio de la Latina. The venue says the stone in its walls is a surviving stretch of Madrid's eleventh-century Christian city wall, and that the big street window and the doors are original to the nineteenth-century building.
