




Los Galayos
Los Galayos is a Castilian roast house and tapas bar on the corner of Calle de Botoneras and Plaza Mayor, trading since 1894, when it opened as Casa Rojo. The bar is built around a hand-carved 17th-century wooden counter; behind it are five dining rooms and two terraces, one on the square. Segovia suckling pig roasted for about eight hours is the signature, and the kitchen runs non-stop from 11:30 to 23:30 every day. It's Recomendado in the Guía Repsol.

About Los Galayos
The Story
Los Galayos goes back to 1894 as Casa Rojo, a bar on the corner of Calle de Botoneras and Plaza Mayor in the Madrid de los Austrias that, perhaps because of what customers could afford then, served only tapas and aperitivos. Over the generations the Rojo family, and after them Miguel Grande, who carried the house through the change of generation, turned the big beer hall into a restaurant, and the Grande family still runs it. It's Recomendado in the Guía Repsol, first listed among the recommendations in 2021.
The Cuisine
Castilian roasts anchor the dining rooms, suckling pig above all. Every cochinillo comes from Segovia and carries the Marca de Garantía de Segovia seal, always from the same farm: piglets of Landrace and Pietrain parentage fed only on their mother's milk and no more than 21 days old, roasted for around eight hours until the meat is tender and the fat rendered. The bar serves a long list of tapas and pinchos, classic and more elaborate, with wines from Rioja, Ribera del Duero, Madrid, Toro, Bierzo and Rías Baixas.
The Generation of '27
On 29 April 1936 the house hosted a banquet for Luis Cernuda to celebrate the publication of La realidad y el deseo, the last gathering of the Generation of '27 before the Civil War scattered them. A period photograph shows Cernuda surrounded by Vicente Aleixandre, Federico García Lorca, Pedro Salinas, Rafael Alberti, Pablo Neruda, Miguel Hernández, José Bergamín, Manuel Altolaguirre, María Teresa León and Concha Méndez, and Lorca's speech of presentation was published two days later in the newspaper El Sol. The dinner took place in what is now the Salón Duque.
Five Rooms and the Bar
The Salón Duque, with rustic woods and carved ceilings, seats 110. The Salón Ávila, all wooden beams and Don Quixote ceramics, seats 32; the Bodeguilla is original brick with round arches and a big screen for 40; El Refugio takes up to 27 with its own terrace; and El Altillo has an oval table for 12. The bar seats about 30 and doesn't take reservations. The private rooms come with wifi and audiovisual equipment, and the restaurant opens every day of the year except the night of 24 December.
