Cocido madrileño is Madrid's chickpea stew, cooked slow and served in courses rather than as a single plate: a soup first, then vegetables and chickpeas, then the meats that flavoured the pot. Ten Madrid restaurants make this list, from a Salamanca kitchen that serves nothing else at midday to a nearly two-century-old institution near Sol where cocido has been the house signature since 1839.

A Guide to Cocido Madrileño in Madrid

What is cocido madrileño?

Cocido madrileño is Madrid's version of the Spanish cocido, a chickpea-based stew built around chickpeas, vegetables and a mix of meats (typically beef, chicken, chorizo, morcilla and tocino), simmered together for hours and then served in separate courses rather than as one bowl.

What are the vuelcos?

A vuelco is a course of the meal, and cocido is traditionally served in either two or three. In the two-vuelco version, used at La Gran Tasca and Manolo 1934, the broth comes first as a soup, followed by a combined plate of vegetables, chickpeas and meats. In the three-vuelco version, used at Casa Carola, the vegetables and chickpeas get their own course, separate from the meats that follow.

Why does cocido run on a schedule at some restaurants?

Building a full pot of cocido from scratch takes hours, so several kitchens on this list don't run it every day. Café Comercial serves its twelve-hour broth on Thursdays only, Manolo 1934 runs it Wednesdays, Saturdays and Sundays, and Casa Ricardo makes it to order from October. Casa Carola keeps it to a September-to-June season, closing for summer in between.

We built this list by reading through Madrid's own cocido coverage, sites and articles dedicated specifically to the dish, including cocidomadrid.com's ranking of Madrid cocido restaurants, alongside pieces from Madrid Secreto, Gastroactitud, La Troupe and Con el Morro Fino, and cross-checking every restaurant those sources named against the Madrid restaurants we've profiled, keeping only those currently open. A restaurant made this list only if we've profiled it and its own detail page or menu independently confirms cocido as a dish it serves. Some well-known names came up repeatedly in the source articles, including La Bola and Malacatín, but aren't included here because they aren't yet ranked in our own system; we've noted that gap rather than guessing at their current details. Where a claim, like a specific historical anecdote, only appeared in a single article and wasn't something we could confirm independently, we left it out rather than repeat it as fact.

La Gran Tasca has traded on Calle de Santa Engracia in Chamberí since 1942, and the company behind it still operates as La Gran Tasca de Chamberí desde 1942 SL. Cocido madrileño is the whole point of the place: the kitchen puts fifteen selected ingredients in the pot, gives the broth 48 hours, and serves it every day in two vuelcos, soup with thick noodles first, then a tray of vegetables, chickpeas and meats. The house runs across two floors with two reservados and a private salon, plus an outdoor terrace, and holds a Repsol Solete. It's lunch only, open 13:00 to 18:00 daily. The carta lists a Full Grand Madrid Cocido by the person alongside a standalone Madrid Cocido Soup and cocido croquettes as a starter.

Lhardy opened in 1839, when the Frenchman Emilio Huguenin Lhardy founded it as a pastry shop before expanding into full meals. It claims a run of Madrid firsts: individual tables, silver cutlery and white tablecloths, plus the fixed-price menu del dia concept Spanish restaurants still use today. Over nearly two centuries its rooms have hosted artists, writers, politicians and nobility, and the mahogany facade still dates from 1880. Cocido madrileño is the house signature, served with a homemade tomato sauce on the side. Lhardy is a member of Madrid's Asociación de Restaurantes y Tabernas Centenarios and holds a Repsol Recomendado. The carta lists Cocido Madrileño at 68 euros and a Lhardy Cocido Croquette at 4 euros each.

Casa Carola started in a small room at Padilla 54 with a deliberate plan not to compete with the neighbouring restaurants but to complement them; it later moved into larger premises in the same building. The narrowness is the point: no asador specialities, no Galician or Asturian cooking, no shellfish, no breakfasts or teas, no menu del dia, and from Sunday to Thursday no dinner at all. The dining rooms serve one thing at midday, cocido madrileño de tres vuelcos, at a single fixed price of 32.90 euros per person including VAT, running from 15 September to 15 June before the house closes for summer. The chickpeas are the restaurant's own, grown at Cabañas de Polendos in Segovia. It holds a Repsol Solete, and the meal opens with a welcome glass of cava.

La Cruz Blanca de Vallecas opened in 2005 under Asturian chef and owner Antonio Cosmen, who set out to make traditional Spanish cooking the house's calling card. The kitchen has picked up national recognition, including the Premio Alimentos de España in 2016 and the Premio Nacional de Hostelería in 2015, and Cosmen received the Comunidad de Madrid's Cruz de la Orden del Dos de Mayo in 2022. The house is known for its cocido madrileño and an award-winning Asturian fabada, with callos, conejo al ajillo and croquetas alongside. It holds a Repsol Solete, stays open every day from 08:00 to midnight, and runs a take-away service on cocido and fabada if you call ahead and bring your own pot. The carta prices cocido madrileño at 27 euros at the bar or 29 euros at a table.

5. La Cocina de Frente — Chef Carlos García's multi-course cocido near the Retiro

La Cocina de Frente is one of the Grupo Bulbiza restaurants, a casa de comidas on Calle Ibiza near the Retiro that reworks traditional Madrid cooking under chef Carlos García. Cocido madrileño is the dish it's best known for, served as a multi-course sitting rather than a single plate. The room reads cozy and rustic with an elegant edge. It's closed Monday and Tuesday, lunch only on Wednesday and Thursday, and open for lunch and dinner Friday through Sunday. Expect to spend in the 51 to 100 euro range per person.

6. Los Galayos — A Plaza Mayor tavern since 1894 with cocido among its classics

Los Galayos has operated right off Plaza Mayor since 1894, per the venue's own site. It splits into two parts: a formal dining room with five private salons and terrace seating onto the square, where Castilian roasts and cochinillo anchor the menu, and a separate historic tavern built around a hand-carved 17th-century wooden counter, where the classics run to ensaladilla rusa and cocido. Timeout Madrid rated it 4 out of 5 stars, noting that despite sitting on the edge of Plaza Mayor, it isn't a tourist-hunting spot. It holds a Repsol Recomendado, opens seven days a week, and is only closed on the night of December 24, with the kitchen running continuously from 11:30am to 11:30pm.

La Posada de la Villa is a Castilian and Madrid restaurant on Cava Baja, in the Palacio barrio, dating itself to 1642, the year it carries in its own Instagram handle. Owner Félix Colomo Domínguez rescued the building in 1980. The house specialises in roast lamb from a wood-fired oven, alongside a cocido de puchero made to order rather than run as a daily fixture. It's closed for summer holidays from 3 August to 2 September and closed Sunday evenings, otherwise running 12:45 to 15:45 and 19:45 to 23:30. Reservations go through CoverManager, prices sit around 26 to 50 euros per person, and there's a terrace and a wheelchair-accessible restroom.

Café Comercial opened in 1887 on Glorieta de Bilbao and became a fixture for Madrid's writers, poet Antonio Machado among them. It closed in the summer of 2015 and reopened in March 2017 under Grupo El Escondite, keeping its period bar, floors and mirrors.
