The Story
La Gran Tasca has been part of Madrid's food history since 1942, a meeting place for neighbours, families, company lunches and celebrations for more than eight decades. The photos on the walls recall famous guests, from Margarita de Borbón, Lola Flores, Carmen Sevilla and Raphael to Di Stéfano, Miguel Ríos, Florentino Pérez, Iker Casillas and Ana Torroja. Manuel Vázquez Montalbán mentioned it in his Pepe Carvalho crime novels, and the Real Academia de Gastronomía Española counts it among the city's legendary restaurants. The company still trades as La Gran Tasca de Chamberí desde 1942 SL, and the house says it wants to be a living restaurant, not a museum.
The Cuisine
Cocido madrileño is the whole point of the place. The house puts fifteen selected ingredients in the pot, gives the broth 48 hours, and serves it every day in two vuelcos: soup with thick noodles first, then a tray of chickpeas, vegetables and meats.
The 48-Hour Cocido
On day one the kitchen cooks the Ibérico meats and bones, always starting from cold water, and leaves the broth to rest and settle in the cold room. On day two it's skimmed, and the chickpeas and vegetables are cooked in it, and the two broths are joined into the soup. The first vuelco is that soup with noodles, brought in a tureen so you can have more; the second is a single tray of Castilian chickpeas, Galician potato, cabbage, red pepper and carrot, with the meats: Asturian onion morcilla, homemade Asturian chorizo smoked over holm oak, white Ibérico tocino, fresh Ibérico pancetta and the rest of the fifteen, including a pelota madrileña. Olive oil and a homemade tomato sauce with cumin come on the side. Children aged 4 to 10 can order just the soup; from 11 the cocido is served per person, and it can be adapted for coeliacs with gluten-free bread and noodles.
Beyond the Cocido
The carta also has Ibérico ham croquetas, cocido croquetas, a cocido-broth soup with chickpeas and chopped meat, Soria torreznos with Padrón peppers, chistorra on baked potatoes, Burgos morcilla, Cantabrian anchovies, grilled artichokes with romesco, salads with ventresca, and meats with baked potatoes such as breaded veal fillets stuffed with ham and cheese. Groups of 10 to 80 can book set cocido or à la carte menus with wine, homemade desserts such as leche frita, cuajada and flan, coffee and liqueurs, and a dry-aged Simmental chuletón or baked sea bass among the mains. There's two hours' free parking at a partner car park on Bravo Murillo 95.
Hours and Booking
The restaurant opens daily from 13:00 to 18:00, with the kitchen serving from 13:00 to 16:00, and closes for the summer in June, July and August. On weekends and holidays in high season there are two two-hour sittings. Book online for up to 12; larger groups send a request through the booking calendar. The cocido can also be ordered for delivery or collection.
