Background
About Manolo 1934
The Story
Manolo opened in 1934 and has stayed in the Rodríguez family ever since. José Ramón, the third generation, ran it for more than 40 years, kept it going through the pandemic with home delivery, and retired in 2022. His three children, who grew up around the kitchen but had gone into other careers (Manuel as an art historian, Paloma as a teacher, Juan in banking), then decided to carry it on. Manuel now cooks, replicating the family recipes, while Juan and Paloma run the dining room.
The Cuisine
Traditional cooking with Madrid and Galician roots, built on good raw materials: ibérico de bellota ham, fresh fish and grilled meats.
The Cocido and the Classics
The dish the house is best known for locally is its cocido madrileño, served on Wednesdays, Saturdays and Sundays in the cooler months, in two vuelcos with the pelota of breadcrumb, garlic and parsley alongside the meats and vegetables, and made to the handwritten family recipe; it's also sold to take away. The 2026 carta keeps a run of 'Manolo classics': pulpo a la gallega on cachelos, callos a la madrileña, Burgos morcilla, homemade torreznos with patata revolcona and lamb sweetbreads with onion and white wine. There are croquetas, ensaladilla, calamares and a three-tapa plate of callos, calamares and kidneys to share; hake two ways, squid in its ink and grilled turbot; and Galician-beef cachopo, Ibérico ribs, roast milk-fed lamb shoulder and oxtail. Desserts lean north, with a filloa filled with pastry cream and a creamy cheesecake with a blue-cheese note.
The Rooms
The front third of the restaurant is the bar, busy with breakfasts from early morning; beer comes in three sizes, the largest simply called a 'Manolo'. Behind the doors, two art deco dining rooms hold the house's treasures: a pewter bar topped by a 'violetera' that once worked as a running-water glass rinser, rescued from an antiques dealer, chairs José Ramón bought abroad years ago, and a cabinet of antique toys collected by the family's maternal grandfather. On weekdays there's a menú del día with three choices for each course.
