Casa Carola is a cocido house on Calle de Padilla in Lista, in the Salamanca district, open since 1998 and holding a Solete in the Guía Repsol. At midday the dining rooms serve one thing: cocido madrileño de tres vuelcos, set in the middle of the table for you to help yourself, as a single €35 menu from mid-September to mid-June. The Story

Casa Carola opened in early 1998 in a small room at Padilla 54, with a clear plan not to compete with the established restaurants around it but to complement them. In October 1999 it moved into the larger, better equipped premises on the right of the same building, and it still uses both: the small bar at number 54 pours wine and serves a light aperitivo, and the dining rooms serve the cocido. The narrowness is the point: no asador specialities, no Galician or Asturian cooking, no shellfish, no breakfasts or teas, no menú del día, and from Sunday to Thursday no dinner at all.

The Cuisine

Cocido madrileño de tres vuelcos, as one fixed-price menu with aperitif, bread, dessert, coffee and a shot of liqueur. Welcome is a glass of cava and a cocido croquette. Then a pot of just-made noodle soup, the house's own gabrieles grown at Cabañas de Polendos in Segovia, new potato and fresh vegetables, and after that the meats: añojo and chicken, chorizo de sarta, homemade morcilla, tocino ibérico, ham knuckle and marrow bones. Olive oil, tomato sauce with cumin and oregano, spring onions and piparras sit on the table.

How the Cocido Works

The €35 menu (VAT included) is charged per person or per seat taken, not per portion, because the cocido is all you can eat. It opens with a glass of cava and a cocido croquette, then a pot of noodle soup, then the chickpeas with new potato and vegetables, then the meats, with olive oil, cumin-and-oregano tomato sauce, spring onions and piparras on the table. Desserts are pastries, artisan ice cream and fresh fruit, followed by coffee and a shot of liqueur. Drinks are charged separately; groups of more than 12 can add unlimited Madrid red, Rueda white, Navarra rosé, beer and soft drinks for €6 a head, or €9 with a Rioja Reserva. Children under 10 who take a seat pay €17.50.

Takeaway and Group Dinners

Cocido can be ordered ahead by phone and collected, at €25 a portion with everything needed to carry it home, or delivered through Glovo. In the evenings Casa Carola offers three set dinner menus for groups (€29, €32 and €35 per person), built from house dishes such as fried chickpeas with streaky bacon, huevos rotos over garlic potatoes with Ibérico ham, a potato stuffed with ropa vieja under three cheeses, a chickpea cream with pimentón and torreznos, scrambled eggs with morcilla, hake a la romana and veal shank medallions in mustard sauce. The house is happy to adjust them to the group.
