La Raquetista en La Habana is the Juan Bravo branch of La Raquetista, the taberna Javier and Paco Aparicio opened in 2015 in homage to their uncle's Bodega Santurce. Javier's cooking starts from family tradition and travels: torreznos, bacalao buñuelos with vizcaína sauce, chickpeas with black butifarra and foie, Massaman-curry oxtail and water-buffalo steak tartare. Paco, a qualified sommelier, runs the wine list.

About La Raquetista en La Habana

The Story

Javier Aparicio started cooking in 1996 at his uncle Antontxu's Bodega Santurce. When the bodega closed in 2015 after 53 years, he and his brother Paco opened La Raquetista in its honour, named for the Basque pelota players on their mother's side who played in Bilbao, Havana, Tijuana, Miami, Milan, Manila and beyond. The original is on Calle del Doctor Castelo; this is the second, on Juan Bravo.

The Cuisine

Family-tradition cooking that travels, as the pelota players did. Bar classics like torreznos and bacalao buñuelos sit beside seasonal produce (red partridge rice, game, Navarre vegetables), sapito a la bilbaína for sharing, pisto with smoked sturgeon, chickpeas with black butifarra, chanterelles and foie, Massaman-curry oxtail, a Colmenar Viejo water-buffalo tartare and a sobao torrija.

The wine

Paco Aparicio spent 15 years as a press chief for car brands, eating and drinking around the world, then qualified as a sommelier; with director and sommelier Raúl Salcedo he builds the list on quality, variety and fair prices.

Breakfast

Unlike the Doctor Castelo original, the Juan Bravo branch serves breakfast on weekdays from 08:00 to 11:30. The kitchen runs 12:00 to 16:00 and 20:00 to 23:30 Monday to Saturday, and lunch only on Sunday.
