About La Raquetista
The Story
La Raquetista opened in the summer of 2015, when brothers Javier and Paco set it up as a double homage, per the venue's own history: to Bodegas Santurce, the winery that closed that year after 53 years, and to the pelota players in their maternal family, whose racket and basket travelled from Bilbao to Barcelona, Madrid, Mallorca, Miami, Milan and Manila. The kitchen, they say, comes from that family tradition but travels like its ancestors did. It's a small room in the Ibiza barrio, on the residential edge of the Retiro, and it's listed in the Guía Repsol.
The Cuisine
Tapas and market cooking, seasonal and product-led: red partridge, game meats, Navarrese vegetables and fish from the best markets, with the house's own recipes as the star and a torrija made with the mythical sobaos of Selaya. There's a large, carefully chosen wine cellar, put together by Paco, and the carta is on the venue's own site.
House Classics
The torreznos, light, soft inside and very crisp, are the house's calling card, and the bar also does bravas, a gilda of anchovy and boquerón, oysters with a sake Bloody Mary, salt-cod buñuelos with vizcaína sauce and Ibérico sweetbreads with young garlic. The kitchen likes to add new stews to the traditional canon: chickpeas with butifarra negra, mushrooms and foie are the house's signature, and oxtail in a Thai massaman curry has become a cult order. There's also txangurro dim sum, red bluefin parpatana treated like pastrami, pularda cannelloni with PX, Colmenar Viejo water buffalo, a whole roasted black-bellied monkfish, and a Scottish red partridge rice with date pâté. The torrija is made with sobaos from El Macho in Selaya instead of bread.
Ten Years On
For its tenth anniversary in 2025 the house put together a special menu at €60, or €100 with pairing: torreznos, a French oyster with sea grapes, txangurro dim sum, sea urchin with potato foam, the tuna pastrami, a chanterelle coca with Mos chicken and tetilla cheese, the chickpeas with butifarra, bacalao a la vizcaína with its tripe in pil pil, sweetbreads with young garlic and the sobao torrija. The pairing ran from a caña of Mahou Clásica through José Michel Champagne, a Pago chardonnay, manzanilla and oloroso to Valdeorras Godello and Campo de Borja Garnacha, a fair picture of a cellar chosen with obsession.
The Team
La Raquetista is run by brothers Javier and Paco, who opened it in 2015. Javier started cooking in 1996 at his uncle Antontxu's Mallorcan tavern, Bodega Santurce. Paco spent fifteen years as press officer for big car brands, which took him to eat in many of the great restaurants of Spain and the world, and built the wine cellar out of that experience: to know wine, he says, you have to have drunk good wine.
