Bresa opens on 12 October 2026 at Calle de Villanueva 21, in Salamanca. It's the new project from brothers Javier and Paco Aparicio, the team behind La Raquetista, Salino and Cachivache, and ABC calls it their most ambitious and personal yet. Bresa's own site is already taking pre-booking requests.
The chef is Alejandro Cano, also named by Revista Hostelería. The menu changes with the seasons and leans on produce: Economía Digital lists bonito in semi-salazón with caviar, line-caught squid with green beans, trompeta mushrooms and black-pig sobrasada, and Galician beef tenderloin with an ossobuco sauce, and Revista Hostelería adds a Burela hake tail filled with greens.
ELLE notes there is no tasting menu, just à la carte.
