The Story

Salino is the third opening from the Aparicio brothers' Grupo Cachivache, after Cachivache Taberna and La Raquetista, and their bet on the Barrio de Retiro, on Calle Menorca. It's laid out for different moods: a bar for tapas without a booking, with half portions, more than 30 wines by the glass and a cocktail list; two small private rooms with high or low tables; and a main dining room for a longer meal around the kitchen and the cellar.

The kitchen cooks Mediterranean and seasonal, leaning on fish like rodaballo from the Cantabrico and quisquillas from Motril, per its own posts, and pairs it with a wine list that's one of the reasons to go.

What's on the Carta

The April 2026 carta opens with 'Madrid tapeo our way': Sánchez Romero Carvajal Ibérico ham, the ham croqueta the restaurant bills as Spain's best at Madrid Fusión 2026, La Raquetista's torreznos, the house bravas, a ventresca ensaladilla, Santoña anchovies with smoked butter, and gallinejas served in a taco 'Madrid-DF'. Starters include French oysters natural or with sake bloody mary or jalapeño gazpacho, a red-tuna pipirrana and almadraba sashimi, and roast leeks with beurre blanc and romesco. There are three rices (salmorreta with carabinero, a Valencia-Shanghai duck rice and a creamy 'green' rice with clams and cod) and mains from red-tuna cheek stewed in oloroso and bacalao a la vizcaína to monkfish fritters, Ibérico cheeks in massaman curry and aged Friesian beef. Several desserts are gluten-free.
