The Story

Cañadío Madrid is the Madrid branch of Cañadío, the restaurant that opened on Santander's Plaza de Cañadío in 1981 and grew into Grupo Cañadío, the group of Paco Quirós that also runs the La Maruca houses and La Primera in Madrid. The Santander team brought the project 420 km south, and the two kitchens have worked in step ever since while keeping their own identities; the Madrid menu shares the Santander classics, from rabas to the 1981 hake. It sits on Conde de Peñalver in Lista, and it's recommended in the Guía Repsol.

The Cuisine

Traditional Cantabrian and Spanish cooking, classic rather than creative, judged on produce and consistency, with several dishes that nod to the people and places behind the group.

The Carta

Starters for sharing include the ensaladilla rusa 'La Maruca', a rock-scorpionfish pudding in homage to Juan Mari Arzak, Cantabrian anchovies with roast peppers, the Cañadío salmorejo and tomato with house-pickled bonito. The hot starters are the Santander ones: rabas as they make them there, croquetas of lacón and boiled egg, Pedreña clams, potatoes with fried eggs and foie, cuttlefish in its ink with rice, and callos to 'my sister Elena's recipe'. Fish (€26 to €28) runs from a tartare-style bonito burger and grilled hake cogote to the merluza a la romana with peppers dated 1981 and hake fritters, plus the fish of the day from La Esperanza market. Meat includes a steak tartare in homage to Alberto Chicote, escalopines stuffed with ham and Liébana cheese, a 'Buena Mujer' sirloin and boned oxtail with sweetbreads. Desserts include the cheesecake, La Maruca's lemon tart, La Primera's flan and the 1981 rice pudding.

All Day on Conde de Peñalver

The doors open at 08:00 on weekdays and 09:30 at weekends and holidays, with a breakfast carta, and stay open until 01:00. The kitchen serves lunch from 13:00 to 16:00 (16:30 on Friday and Saturday) and dinner from 20:00 to 23:00, every day. There's a terrace, and the carta marks which dishes are safe for coeliacs, with a separate allergen menu.
