Gaman
Gaman is chef Luis Arévalo's nikkei restaurant on Calle Ferrer del Río, in the Salamanca district, opened in 2018 in the same premises where he launched Kena four years earlier. Born in Iquitos and trained in Japanese technique, Arévalo is widely seen as a pioneer of nikkei cooking in Spain, and Gaman is his freer, more relaxed version of it: ceviches, tiraditos, sushi, gyozas and sanguchitos, or a menu in the chef's hands.

About Gaman
The Story
'Gaman' is a Japanese word from Zen Buddhism meaning to endure the seemingly unbearable with patience and dignity, and the restaurant is chef Luis Arévalo's comeback project. In 2018 he returned to the premises where, in 2014, he had opened Kena, to show a freer, more personal and relaxed side of his nikkei cooking, the fusion of Japanese and Peruvian food born of Japanese migration to Peru in the late 19th century.
The Cuisine
Nikkei: Japanese technique applied to product with Peruvian flavours, in a more cosmopolitan, global form. The carta covers gyozas, sanguchitos, sashimi, usuzukuri, ceviches, tartares, tiraditos and sushi of every kind, or you can leave it to the chef with a tasting menu. Wines, sakes and pisco-based cocktails go with it.
Carta or Chef's Menu
Order from the carta to share (a ceviche or tiradito, a few nigiri or makis, gyozas and a sanguchito), or put yourself in Arévalo's hands with a tasting menu that moves between the two cuisines. The approach is product first, treated with traditional Japanese technique, and it's a more relaxed room than the chef's earlier restaurants.

The Team
Luis Arévalo was born in Iquitos, Peru. He started at Sushi Ito in Lima, trained in Japanese technique under chef Koichi Watanabe at Sakura in Santiago de Chile, worked at the Staubbach hotel in the Swiss Alps, then spent four years with Madrid's Kabuki group. He ran 19 Sushi Bar for Grupo Bambú from 2007, helped open the 99 Sushi Bars on Ponzano and Hermosilla, led Nikkei 225 from 2010 and opened Kena in 2014.
